The American Mass Hall – Classic American Cuisine with Vibrant Nuances of Asian Flavours [MEDIA INVITE]

The culinary scene within Singapore’s CBD is vibrant, however, it can be challenging to find classic American Cuisine. The departure of traditional American casual franchises such as Chilli’s, TGI Friday, Dan Ryan and Tony Roma’s left a gaping hole in American casual dining. Recognising the void in the market, Chef Heman Tan, a seasoned culinary professional and co-owner entered this bustling CBD dining scene with The American Mass Hall (“AMH”). An American-theme restaurant, focusing on classic American cuisine with a vibrant infusion of Asian zest, the signature of Chef Heman.

The décor is a blend of traditional American Southern casual steakhouses with a modern touch. The indoor dining tables and chairs use dark colour wood, usually found in a traditional Southern steakhouse. The modern touch comes in their Instagram Sofa section that invites you to take photos, complete with cowboy hats as props.

We kicked off the tasting with Mass Hall’s Oyster Bay [$5 per piece] – Ice Smoked, Japanese Oysters, Orange Granita (min 3 pcs). The oysters made a grand entrance with the dry-iced effect when served on the table. They are plump, juicy and refreshing. The orange granita sparks a citrussy flavour and the balsamic vinegar pearls add a lovely sweetness to the oysters.

Hush Puppy Corn Ball [$8] – Corn Ball, Spicy Mayo. It is a Southern side dish, that originated from Louisiana. Hush puppies are made from deep-fried cornmeal or wheat flour dumplings. It has a crispy exterior and chewy interiors with juicy corn kernels. Served with spicy mayo, it will get your appetite going for the rest of the meal.

Mass Hall’s Baked Garlic Bun [$5] – Garlic Butter, Loaf. Instead of using baguettes, AMH uses hot dog buns. Each bun has a crispy exterior and fluffy interior filled with garlic butter. Extra layer of garlic butter mix will make it even better. LD says that it tasted like old school garlic bread from childhood.

Home Made Mushroom Soup (GF) [$9] – Champignons, Shitake, Cream; French Onion Soup [$9] – Red & White Onion, Vegetable Stock, Gruyere Cheese. Both these soups are made from scratch. If you are gluten intolerant, please inform the service staff and they will leave out the croutons from the mushroom soup. While the mushroom soup is delicious, the French Onion soup is just superb. Sweet, robust and packed with solid vegetable essence. Yummy!

Burrata “Boo-rah-tuh” [$19] – Burrata, Parma Ham, Tomatoes, Watermelon, Balsamic Reduction Salad. Our favourite cheese and salad. The creaminess of the burrata paired well with Parma ham and balsamic reductions. The sweet juices from the watermelon and tomatoes round up the ingredients on the plate nicely.

Continuing with the Burrata theme, The Burrata Lava Cheesy Wonderland Lovers [$24] – Burrata, Mozzarella, Gruyere, Tomato Coulis. This American Sour Dough Pizza comes in oval shape and is loaded with generous toppings of triple cheese. It is creamy, cheesy and it has that WOW pull cheese effect when we take a slice.

Chili Crab Mac & Cheese [$18] – Crab Meat, Mac & Cheese. An American classic dish with a local twist. When I had my first bite of just mac and cheese, the “Jelakness” just hits me. But once I incorporated the Chilli Crab, the spicy and tangy sauce just cuts through the overwhelming richness from the creamy cheese and balances this dish nicely.

The Octopus [$22] – Sous Vide Octopus, Mashed Potato, Sous Vide Egg. Super tender octopus, combined with velvety mashed potatoes and sous vide egg. Watch out for the spicy paprika kick in the egg that brightens up this dish.

For the Meats, we had Iberico Platters, “Bone-drop” BBQ Iberico Prime Ribs [$39] – 700gm BBQ Iberico Prime Ribs, Cole Slaw, Pineapple Salsa. True to its name, Chef Heman effortlessly pulled out the bones. The meat is very tender, juicy and infused with paprika hickory BBQ sauce. The classic coleslaw is crunchy and creamy, while the pineapple salsa balances the dish nicely.

For the Meats, Steaks, Fish and Chicken dishes, you can choose one or two side dishes to your liking. Those side dishes are Classic Creamy Spinach, Corn Nibbles with Bacon & Cheese, French Fries, Potato Wedges, Baked Potato with Sour Cream & Bacon, Mushroom Ragout, Smashed Potatoes, Coleslaw, Seasonal Veggies, Onion Rings, Butter Rice, and Sous Vide Egg with Brown Jus.
The Menu 
Angus Beef Short Rib [$30] – 120-Day Grain Fed Angus Beef Short Ribs. This dish is brought to your table, covered with a glass dome filled with smoke. Once settled, the service staff will slowly remove the dome and the smoke will slowly dissipate, leaving this dish infused with a smoky aroma. The beef short ribs are braised to fork tender and served on top of smooth and creamy mashed potatoes. The additional red wine sauce on the side adds the OMPH factor to this dish. A comforting dish for me.

Cajun Blackened Barramundi Fillet [$25] – Grilled Barramundi Fillet, Cajun Spice, Pineapple Salsa. A Southern-style dish, where the fish is coated with spice blend and seared on a hot pan. The searing released a lovely aroma, while the spices absorbed into the fish and created a nice black crust on our barramundi fillet. It is plated with pineapple salsa and a wedge of lime.

My Premium Fish & Chips [$18] – Battered Barramundi Fillet & Tartar Sauce. A perfectly fried barramundi fish fillet. The exterior is crispy and crunchy, while the fish remain moist and flaky. Our fish and chips are plated with potato wedges and corn nibbles with bacon & cheese. Not to worry, you can still choose the traditional fries for your sides if you want.

Spaghetti Prawn Aglio Olio [$22] – Spaghetti Chilli, Garlic, Bacon, Prawn, Button Mushroom. The aglio olio here is created using Chef Heman’s Aglio Olio Chilli Paste produced with Kwong Cheong Thye Asian Sauce Manufacturer. This al-dente spaghetti dish can only be described as EXPLOSIVE and not for the faint-hearted, but those who are in for kick, this is the best dish.

We finally reached the desserts. Tiramisu [$9] – Espresso infused Tiramisu, Gelato; Crème Brûlée Cempedak [10] – Burnt Cream, Cempedak, Popping Candy, Gelato; and Deconstructed Apple Crumble [$9] – Green Apple, Popping Candy, Gelato. These trio of desserts round up the lunch nicely.

The deconstructed apple crumble has a light buttery crumble, paired well with a touch of sourness from the green apple and vanilla gelato. The tiramisu is creamy and loaded with a solid shot of espresso. The Crème Brûlée Cempedak takes the crown for me. The Cempedak in the crème just explodes when you bite into it, and it is just rocking when it is paired with the caramelised torched sugar.

Overall, we had a great time feasting on casual American cuisine curated by Chef Heman and his team. Instead of serving the typical classic dishes, Chef Heman incorporates his signature flair to the dishes. Our favourite dishes are Mass Hall’s Oyster Bay, The Burrata Lava Cheesy Wonderland Lovers, The Octopus, Angus Beef Short Rib and Premium Fish and Chips. Not forgetting the Tiramisu and Crème Brûlée Cempedak. Check out The American Mass Hall for your next dining destination!! Cheers!!

Kwong Cheong Thye x Celebrity Chef Heman Tan [MEDIA INVITE]

Asian Sauce Manufacturer Kwong Cheong Thye (“KCT”) unveil its latest line of specialty Western Paste and Sauce, Aglio Olio Chilli Paste & Paprika Hickory BBQ Sauce. This project is spearheaded by Mr. Alvin Choo, the 5th generation co-owner of KCT in collaboration with Celebrity Chef Heman, Winner of World Gourmet Awards 2022 (Western Cuisine Chef of the Year).

The Aglio Olio Chilli Paste, a harmonious blend of zesty garlic and fragrant herbs, promises to transport your taste buds to the South of Italy, delivering an explosion of flavours that will leave you craving more. Meanwhile, the Paprika Hickory BBQ Sauce, infused with the smoky allure of the finest hickory wood, will likely transport you to a sizzling barbecue haven of South Carolina, where every bite is a revelation.

During the launch of Aglio Olio Chilli Paste & Paprika Hickory BBQ Sauce, we were treated to a scrumptious meal by Chef Heman and the team at KCT. The meal showcases the usage of both Aglio Olio Chilli Paste and Paprika Hickory BBQ Sauce in various dishes.

It started with bread platter; sourdough served with butter infused with Paprika Hickory BBQ sauce. The hickory sauce adds spice and smoky aroma to the smooth and creamy butter.

For Amuse Bouche, we had Pulled Lamb Leg En Croute, Prawn Dumpling, Crispy Squid Dumpling and Cold Tofu. The pulled lamb leg is slow-cooked over 24 hours with Paprika Hickory BBQ sauce. The result is a fork-tender leg of lamb infused with lovely smoked paprika and hickory wood aroma inside the crispy pastry. The flavour of the BBQ sauce is less prominent in the crispy squid dumpling and cold tofu dishes. It is more subtle, but it adds another layer of flavour to both dishes.

The prawn dumplings dish is similar to the spicy sour prawn dumplings version in Asian cuisine. The aglio olio chilli paste is added to the mix; however, it is overshadowed by the strength of the vinegar and chilli padi.

The next dish is seafood bisque. Initially, we were served the Crab Timbale, a mixed of crab meat with prawns. Chef Heman and his team then bring in the hot soup (bisque) and pour it on the bowl tableside, till it covered the crab timbale. The bisque is thick and robust bisque, paired beautifully with the crab timbale. Chef Heman uses the oil from the paste to add a fragrant and spicy flavour that cuts through the robustness of the bisque. Yummy.

We had two main dishes Coral Cod Fillet and Aglio E Olio KCT Ramen. The Coral Cod is lightly seasoned and plated on top of tosaka and black fungi salad. At the bottom, the sauce is a mix of hollandaise sauce with Paprika Hickory BBQ Sauce. I like how the flavours interact, with the moist and crispy cod. The creamy hollandaise sauce absorbs the unique paprika and the lovely hickory sauce, at the same time tempering the strong flavour from the sauce so it paired well with the fish.

For the Aglio E Olio KCT Ramen, Chef Heman takes a liberal approach with the paste. Each strand of KCT ramen is filled with the explosive flavour of Aglio Olio Chilli Paste. It was an explosion of flavour in each slurp. Very spicy!

Dessert is Spicy Chocolate Lava Cake with Lime Sorbet Crumble. This is not your ordinary Chocolate Lava Cake. The Aglio Olio Chilli Paste is folded in with the chocolate lava. I have tried chilli chocolate cake before, but this is at another level. Level 10. Though the lime sorbet supposed to cool down the fire, I was still unable to finish the chocolate lava cake, but LD did.

Overall, Celebrity Chef Heman and the team at KCT have demonstrated the application of Aglio Olio Chilli Paste and Paprika Hickory BBQ Sauce creatively into these delicious dishes. With the availability of Aglio Olio Chilli Paste and Paprika Hickory BBQ Sauce, it is easier for us to recreate the restaurant flavours in our home. Hopefully, they can provide some interesting recipes in the future, so it is easier to guide the consumers on how to use KCT western sauce and paste. Cheers!!

Meat n’ Chill – Smoking Sixth Anniversary [MEDIA INVITE]

Meat n’ Chill (“MNC”) is celebrating its sixth anniversary with Smokin’ Special from this April with two special offerings. Smokin’ Wagyu Striploin Steak ($68) and Smoked Whisky ($16).

A bit of background of MNC. Meat N’ Chill is a “Meat Centric” restaurant born from the friendship of three good friends that are foodies at heart. MNC is an ideal restaurant to gather, enjoy a hearty meal and chill over a few glasses of drinks. Located just outside Sixth Avenue Bukit Timah, MNC is very accessible. Helm by Chef Bruce, these three good friends spend countless hours experimenting to come out with their secret marinade and produce the perfect marinade for the meanest ribs in town.



Back to the steak, The Wagyu Striploin [MB5], promising a delicate marbling that gives a buttery flavour and tender mouthfeel. I find the overall experience is just intriguing. 90% of the flame grilling are done in the kitchen. The service staff brought the steak to the table, covered with the glass dome attached to the smoking vessel. The service staff then lit the vessel and the smoke slowly engulf the steak and sides inside the dome.

Shortly after, the dome is removed and as the smoke slowly dissipates, the “diva” appeared. True to its reputation, Wagyu MB5 is just delicate and easy to slice. I ask for medium-rare and it was cooked to perfection. Although the hickory smoky flavour is strong, the aroma remains subtle on the steak. I am glad that MNC uses striploin instead of ribeye, as you can taste the flavour of the beef, as it melts in your mouth instead of just the fats. A #beefgasm experience.

The steak is served with smoked bread and butter with greens. If you like a strong smoky flavour, you should eat the steak with the bread. It acts as a sponge and absorbs most of the smoky flavour. The baby asparagus is crunchy, butter and lovely.

Smoked Whisky ($16) choice of Jim Bean / Glenfiddich 12 / Chivas Regal 12 / Remy VSOP. As I can’t drink alcohol, my dining partner Alvin ordered Remy VSOP. According to him, “the smoky scent was nice, adds some dynamism to the taste of the Remy VSOP. There’s a fuller sweetness in the taste as opposed to whisky”.

Of course, you can’t come to MNC without ordering MNC “Meanest Pork Ribs”. We choose the Hickory flavour with coleslaw and chili cheese fries. Smoky, juicy and succulent pork ribs. Don’t expect fork-tender pork ribs, instead, expect a lovely succulent pork ribs texture coated with the hickory flavour BBQ sauce. Leave the cutleries aside and just use your fingers.

For chili cheese fries, MNC uses thick-cut fries which have a crispy exterior and soft interior, a good vessel to carry the smoky chili and cheese. However, I find the fries can do with another scoop (or 2 scoops) of chili. The coleslaw is way too watery to my liking.

Overall, the Smokin’ Wagyu Striploin Steak is a worthy dish to celebrate the sixth anniversary of MNC together with the Smoked Whisky. It was an awesome experience and I don’t mind coming back for more. Cheers!!
