The American Mass Hall – Classic American Cuisine with Vibrant Nuances of Asian Flavours [MEDIA INVITE]

The culinary scene within Singapore’s CBD is vibrant, however, it can be challenging to find classic American Cuisine. The departure of traditional American casual franchises such as Chilli’s, TGI Friday, Dan Ryan and Tony Roma’s left a gaping hole in American casual dining. Recognising the void in the market, Chef Heman Tan, a seasoned culinary professional and co-owner entered this bustling CBD dining scene with The American Mass Hall (“AMH”). An American-theme restaurant, focusing on classic American cuisine with a vibrant infusion of Asian zest, the signature of Chef Heman.

The décor is a blend of traditional American Southern casual steakhouses with a modern touch. The indoor dining tables and chairs use dark colour wood, usually found in a traditional Southern steakhouse. The modern touch comes in their Instagram Sofa section that invites you to take photos, complete with cowboy hats as props.

We kicked off the tasting with Mass Hall’s Oyster Bay [$5 per piece] – Ice Smoked, Japanese Oysters, Orange Granita (min 3 pcs). The oysters made a grand entrance with the dry-iced effect when served on the table. They are plump, juicy and refreshing. The orange granita sparks a citrussy flavour and the balsamic vinegar pearls add a lovely sweetness to the oysters.

Hush Puppy Corn Ball [$8] – Corn Ball, Spicy Mayo. It is a Southern side dish, that originated from Louisiana. Hush puppies are made from deep-fried cornmeal or wheat flour dumplings. It has a crispy exterior and chewy interiors with juicy corn kernels. Served with spicy mayo, it will get your appetite going for the rest of the meal.

Mass Hall’s Baked Garlic Bun [$5] – Garlic Butter, Loaf. Instead of using baguettes, AMH uses hot dog buns. Each bun has a crispy exterior and fluffy interior filled with garlic butter. Extra layer of garlic butter mix will make it even better. LD says that it tasted like old school garlic bread from childhood.

Home Made Mushroom Soup (GF) [$9] – Champignons, Shitake, Cream; French Onion Soup [$9] – Red & White Onion, Vegetable Stock, Gruyere Cheese. Both these soups are made from scratch. If you are gluten intolerant, please inform the service staff and they will leave out the croutons from the mushroom soup. While the mushroom soup is delicious, the French Onion soup is just superb. Sweet, robust and packed with solid vegetable essence. Yummy!

Burrata “Boo-rah-tuh” [$19] – Burrata, Parma Ham, Tomatoes, Watermelon, Balsamic Reduction Salad. Our favourite cheese and salad. The creaminess of the burrata paired well with Parma ham and balsamic reductions. The sweet juices from the watermelon and tomatoes round up the ingredients on the plate nicely.

Continuing with the Burrata theme, The Burrata Lava Cheesy Wonderland Lovers [$24] – Burrata, Mozzarella, Gruyere, Tomato Coulis. This American Sour Dough Pizza comes in oval shape and is loaded with generous toppings of triple cheese. It is creamy, cheesy and it has that WOW pull cheese effect when we take a slice.

Chili Crab Mac & Cheese [$18] – Crab Meat, Mac & Cheese. An American classic dish with a local twist. When I had my first bite of just mac and cheese, the “Jelakness” just hits me. But once I incorporated the Chilli Crab, the spicy and tangy sauce just cuts through the overwhelming richness from the creamy cheese and balances this dish nicely.

The Octopus [$22] – Sous Vide Octopus, Mashed Potato, Sous Vide Egg. Super tender octopus, combined with velvety mashed potatoes and sous vide egg. Watch out for the spicy paprika kick in the egg that brightens up this dish.

For the Meats, we had Iberico Platters, “Bone-drop” BBQ Iberico Prime Ribs [$39] – 700gm BBQ Iberico Prime Ribs, Cole Slaw, Pineapple Salsa. True to its name, Chef Heman effortlessly pulled out the bones. The meat is very tender, juicy and infused with paprika hickory BBQ sauce. The classic coleslaw is crunchy and creamy, while the pineapple salsa balances the dish nicely.

For the Meats, Steaks, Fish and Chicken dishes, you can choose one or two side dishes to your liking. Those side dishes are Classic Creamy Spinach, Corn Nibbles with Bacon & Cheese, French Fries, Potato Wedges, Baked Potato with Sour Cream & Bacon, Mushroom Ragout, Smashed Potatoes, Coleslaw, Seasonal Veggies, Onion Rings, Butter Rice, and Sous Vide Egg with Brown Jus.
The Menu 
Angus Beef Short Rib [$30] – 120-Day Grain Fed Angus Beef Short Ribs. This dish is brought to your table, covered with a glass dome filled with smoke. Once settled, the service staff will slowly remove the dome and the smoke will slowly dissipate, leaving this dish infused with a smoky aroma. The beef short ribs are braised to fork tender and served on top of smooth and creamy mashed potatoes. The additional red wine sauce on the side adds the OMPH factor to this dish. A comforting dish for me.

Cajun Blackened Barramundi Fillet [$25] – Grilled Barramundi Fillet, Cajun Spice, Pineapple Salsa. A Southern-style dish, where the fish is coated with spice blend and seared on a hot pan. The searing released a lovely aroma, while the spices absorbed into the fish and created a nice black crust on our barramundi fillet. It is plated with pineapple salsa and a wedge of lime.

My Premium Fish & Chips [$18] – Battered Barramundi Fillet & Tartar Sauce. A perfectly fried barramundi fish fillet. The exterior is crispy and crunchy, while the fish remain moist and flaky. Our fish and chips are plated with potato wedges and corn nibbles with bacon & cheese. Not to worry, you can still choose the traditional fries for your sides if you want.

Spaghetti Prawn Aglio Olio [$22] – Spaghetti Chilli, Garlic, Bacon, Prawn, Button Mushroom. The aglio olio here is created using Chef Heman’s Aglio Olio Chilli Paste produced with Kwong Cheong Thye Asian Sauce Manufacturer. This al-dente spaghetti dish can only be described as EXPLOSIVE and not for the faint-hearted, but those who are in for kick, this is the best dish.

We finally reached the desserts. Tiramisu [$9] – Espresso infused Tiramisu, Gelato; Crème Brûlée Cempedak [10] – Burnt Cream, Cempedak, Popping Candy, Gelato; and Deconstructed Apple Crumble [$9] – Green Apple, Popping Candy, Gelato. These trio of desserts round up the lunch nicely.

The deconstructed apple crumble has a light buttery crumble, paired well with a touch of sourness from the green apple and vanilla gelato. The tiramisu is creamy and loaded with a solid shot of espresso. The Crème Brûlée Cempedak takes the crown for me. The Cempedak in the crème just explodes when you bite into it, and it is just rocking when it is paired with the caramelised torched sugar.

Overall, we had a great time feasting on casual American cuisine curated by Chef Heman and his team. Instead of serving the typical classic dishes, Chef Heman incorporates his signature flair to the dishes. Our favourite dishes are Mass Hall’s Oyster Bay, The Burrata Lava Cheesy Wonderland Lovers, The Octopus, Angus Beef Short Rib and Premium Fish and Chips. Not forgetting the Tiramisu and Crème Brûlée Cempedak. Check out The American Mass Hall for your next dining destination!! Cheers!!

Dignity Kitchen – Good Food for Good Cause

During this stabilisation period, I saw frequent posts in FB Group calling for support of this makan place. Dignity Kitchen by Project Dignity is a food court run by people with disabilities (physical and intellectual) and disadvantaged (social and mental).

Project Dignity has a mission to restore dignity to different-abled and disadvantaged through vocation with passion. Project Dignity provides sponsored training for unemployed adults with special needs and places them with our employment partners within the F&B, hospitality and retail sectors. Some of the graduates will be hired in their food court (Dignity Kitchen) and book retail stores (Dignity Mama). For more information on Project Dignity, you can check them out here.

Stalls 1
Dignity Kitchen is a food court concept, with the following stalls Nasi Lemak, Chicken Rice, Claypot Rice, Rojak, Noodle, Western, Bakery, Fruits and Nanyang Kopi. When you enter the food court, you just place all your orders at the cashier and wait for your number to be called on the screen. Afterwards, proceed to the designated stall for collection. All the stalls and cashier are manned by the differently-abled and disadvantaged crew.

On my first visit to Dignity Kitchen with my regular makan kaki “K”. We ordered Signature Rojak ($4) to share. The portion is very generous, consisting of fruits, vegetables, youtiao, coated evenly with the rojak sauce and sprinkle with ground peanuts. The ingredients are fresh, the sauce is thick, however, it can be better if fermented prawn paste is stronger to give the sauce more OMPH.

Fish’N’Chips ($6.50). A huge place of fish and chips. The batter is crispy and the fish is flaky. I found out later that they use a higher-grade dory fish for the fish and chips. The crinkle fries are crisp externally and moist internally. There is fresh salad, lemon wedge on the side and mayonnaise as a dipping sauce instead of tartar sauce. The fish and chips here have the same standard as those in bistros or gastropubs.

K decided to have Chicken Chop ($6.50). Since he is watching his carbo intake, he only has protein and vegs. I tried a bite of the chicken chop, it is juicy, succulent, with a touch of crispiness externally.

We also tried their Muffins ($2.50 each). There are moist, light and packs with flavour, especially the Oreo Chocolate Flavour Muffin.

On the second visit, I had Nasi Lemak with Beef Rendang ($4). Looking at the portion, you are likely to pay more outside. The rice is rich and fragrant, while the beef rendang is tasty and succulent. The achar is a bit spicy, yet refreshing.

LD ordered Prawn Laksa ($5). According to her, the broth is rich, lemak and packs a good spicy kick. The portion is generous and the prawns are fresh. A very good serving indeed.

The environment at Dignity Kitchen is clean, tidy with simple furnishing and air-conditioned. While dining at Dignity Kitchen, you can also see the two training classes use to Train-and-Place programme for adults with special needs seeking employment; and for WSQ and SkillsFuture eligible hawker culinary courses for the public.

CBK Verdict: Although Dignity Kitchen main mission is a social enterprise, the food serves here are of a good standard. They are also tasty and generous with their portion. What better way to support a social cause with a happy tummy. Cheers!

The English House – Sunday Roast [MEDIA INVITE]

Sunday Roast is one of my favourite meal when it comes to Western traditions. Spending my formative years in Melbourne with Australian families, I just fell in love with Sunday Roast. It took hours of cooking to prepare Sunday Roast and the meal finished in 15 minutes. However, the feeling of togetherness when all family members gathering together and savour the meal is just an unforgettable experience.

Sunday Roast is originated from England as a meal after church on Sunday. Therefore, having a Sunday Roast at one of the top English Restaurant in Singapore, prepared by chefs trained by Godfather of modern cooking is definitely a gastronomic experience to look forward too.

At The Reception

The English House by Macro Pierre White just launched their Sunday Roast menu last month. It is priced at $75 for 4-course meal. FYI, The English House is not a fine dining restaurant, instead, it is Brasserie Style Restaurant with superb service.

We started with Quails Scotch Egg and Devil’s on Horseback as canapes. The quail egg is nicely cooked to a soft boil, wrapped in a well-seasoned sausage meat and fried till golden brown. It is served with salad cream base, but I think it is nice to eat on its own.

Meanwhile, the Devil’s on Horseback is one of the most common hot appetizers served as part of Christmas feast in England. Sweet prune wrapped with salty bacon sure tickle my appetite.

For starters, I choose Potted Duck with Green Peppercorns, while LD chose Parfait of Foie Gras Au Raisin Sec ($8 supplement). A version of duck pate served with toasted sourdough. The pate is rich, fatty, pack the superb flavour of the duck and duck fats. The green peppercorns seem to accentuate the flavour of the duck instead of overpowering. The pate can be easily spread on the crispy sourdough; I certainly can have this dish all the time. In case if you find it too rich, there are some gherkins and pickled mini onions on the side.

LD’s foie gras pate has a nice combination of creamy and velvety foie gras, topped with the sweetness of the raisin jelly. Once you slathered it on the sliced of toasted sourdough, the combination of crispy and velvety texture is just awesome. It is worth paying the additional $8.

As we were seated next to Running Man, the three of us shared our dishes so we get to try Mr Walsh’s English Pea and Ham Soup. Thick and robust mushy green pea, filled with thick cuts of delicious ham. First time I ever tried English Pea and Ham soup, on its own it is a very filling dish.

Moving to mains, Roast Rib of Black Angus Molly Parkin ($10 Supplement) is my pick for Sunday Roast. Nicely roasted Black Angus Rib. The crust is crispy, while the meat is roasted to medium rare, juicy and almost melts in your mouth. The same can be said of the roast potatoes, that has double crispiness externally, while it remains moist internally.

The Yorkshire Pudding is huge and eggy, while the generous serving of buttered garden peas drenched in awesome beef roasting juice. Truth to be said, the portion is humongous.

Sage & Onion Stuffings

For Honey Roast Pork Belly with Apple Sauce, it has the same plating style as the roast beef. This which includes Yorkshire pudding, roast potatoes, peas and sage & onion stuffings. The two slabs of pork belly are thick, fatty and juicy. The skin is roasted separately to create light and crispy crackling. The gravy for the pork belly is on the sweet and fruity side due to the combination of honey and apple sauce.

There are two more side dishes serve separately Box Tree Braised Red Cabbage, Swede Puree. The braised red cabbage is crunchy and tangy, which helps to balance the richness from the meats. The swede puree or sweet potato puree is smooth and sweet. Personally, the plate of Sunday Roast together with the side dishes are enough to fill my tummy.

Mr Lamb’s Shepherd’s Pie is one of The English House’s main dishes you can choose from if you are not keen on the roast meat. The lamb moist, juicy and not gamy, covered with nicely piped dense mashed potatoes. Most of the Shepherd’s Pie in Singapore uses beef, so I am glad to be able to try a traditional Lamb Shepherd’s Pie.

For desserts, I chose my favourite Bread and Butter Pudding. The version here is slightly non-traditional. It is more of a pudding version, light and wobbly, with a touch of caramelisation on top that replicates the crust of the bread. Served with fresh cream it is just a nice way to end the meal.

Sherry Trifle Wally Ladd and The Box Tree Eton are Marco Pierre White restaurants signature desserts.  Sherry Trifle Wally Ladd constructed from sherry liquor, cherry jam and custard mix. Topped with whipped cream and chopped roasted almond and pistachio.

The Box Tree Eton or also known as Eton Mess is a combination of strawberries, double cream, meringue and fresh garnishes. Both of these desserts are yummy in their own rights.

Other than the Sunday Roast menu, we also tried Fried Fillet of English Wild Turbot ($98). Yes, the price is correct, not a typo error. For those unfamiliar with turbot fish like me, Wild Turbot is also known as Royalty fish in the UK and across Europe. The flesh is delicate and fatty, it just melts in your mouth. It is perfectly paired with the delicate homemade tartar sauce and salty mushy peas.

Omelette Arnold Bennett, Created at The Savoy, London ($38). A very complicated omelette in my opinion. You can expect a strong and pungent flavour from the smoked haddock, parmesan cheese and Mornay sauce. The texture is smooth and delicate, while the strong pungent flavour seems to entice you to scoop more and more of the dish. One of the dish that I will order again.

The English House has three bar spaces and the largest Whiskey collections in Singapore. You can look forward to their extensive bar menu that includes wine, hard liquor, cocktails, mocktails and other drinks.

The décor of The English House is based on Colonial settings. The walls and shelf are like a museum or gallery showcasing Marco Pierre White collections. This includes photographs by legendary Terry O’Neill, illustrations by cartoonist Raymond Jackson (JAK) and other mementoes from movie sets or establishments dear to Marco. My personal favourite is the display of stacks of Michelin Guides, it seems irony as Marco disdain for the guide and its inspectors.

If you have trouble finding the restaurant as we did, just look for the Colonial House covered with lushes of trees along Mohamed Sultan road. Or for those who are at that age, it is the location of Old Mdm Wong’s.

Overall, The English House definitely served one of the best British traditional Sunday Roast in Singapore. For those who never been to the UK like me, this is a place to experience English cuisine without flying all the way there. Cheers Mate!!
