The American Mass Hall – Classic American Cuisine with Vibrant Nuances of Asian Flavours [MEDIA INVITE]

The culinary scene within Singapore’s CBD is vibrant, however, it can be challenging to find classic American Cuisine. The departure of traditional American casual franchises such as Chilli’s, TGI Friday, Dan Ryan and Tony Roma’s left a gaping hole in American casual dining. Recognising the void in the market, Chef Heman Tan, a seasoned culinary professional and co-owner entered this bustling CBD dining scene with The American Mass Hall (“AMH”). An American-theme restaurant, focusing on classic American cuisine with a vibrant infusion of Asian zest, the signature of Chef Heman.

The décor is a blend of traditional American Southern casual steakhouses with a modern touch. The indoor dining tables and chairs use dark colour wood, usually found in a traditional Southern steakhouse. The modern touch comes in their Instagram Sofa section that invites you to take photos, complete with cowboy hats as props.

We kicked off the tasting with Mass Hall’s Oyster Bay [$5 per piece] – Ice Smoked, Japanese Oysters, Orange Granita (min 3 pcs). The oysters made a grand entrance with the dry-iced effect when served on the table. They are plump, juicy and refreshing. The orange granita sparks a citrussy flavour and the balsamic vinegar pearls add a lovely sweetness to the oysters.

Hush Puppy Corn Ball [$8] – Corn Ball, Spicy Mayo. It is a Southern side dish, that originated from Louisiana. Hush puppies are made from deep-fried cornmeal or wheat flour dumplings. It has a crispy exterior and chewy interiors with juicy corn kernels. Served with spicy mayo, it will get your appetite going for the rest of the meal.

Mass Hall’s Baked Garlic Bun [$5] – Garlic Butter, Loaf. Instead of using baguettes, AMH uses hot dog buns. Each bun has a crispy exterior and fluffy interior filled with garlic butter. Extra layer of garlic butter mix will make it even better. LD says that it tasted like old school garlic bread from childhood.

Home Made Mushroom Soup (GF) [$9] – Champignons, Shitake, Cream; French Onion Soup [$9] – Red & White Onion, Vegetable Stock, Gruyere Cheese. Both these soups are made from scratch. If you are gluten intolerant, please inform the service staff and they will leave out the croutons from the mushroom soup. While the mushroom soup is delicious, the French Onion soup is just superb. Sweet, robust and packed with solid vegetable essence. Yummy!

Burrata “Boo-rah-tuh” [$19] – Burrata, Parma Ham, Tomatoes, Watermelon, Balsamic Reduction Salad. Our favourite cheese and salad. The creaminess of the burrata paired well with Parma ham and balsamic reductions. The sweet juices from the watermelon and tomatoes round up the ingredients on the plate nicely.

Continuing with the Burrata theme, The Burrata Lava Cheesy Wonderland Lovers [$24] – Burrata, Mozzarella, Gruyere, Tomato Coulis. This American Sour Dough Pizza comes in oval shape and is loaded with generous toppings of triple cheese. It is creamy, cheesy and it has that WOW pull cheese effect when we take a slice.

Chili Crab Mac & Cheese [$18] – Crab Meat, Mac & Cheese. An American classic dish with a local twist. When I had my first bite of just mac and cheese, the “Jelakness” just hits me. But once I incorporated the Chilli Crab, the spicy and tangy sauce just cuts through the overwhelming richness from the creamy cheese and balances this dish nicely.

The Octopus [$22] – Sous Vide Octopus, Mashed Potato, Sous Vide Egg. Super tender octopus, combined with velvety mashed potatoes and sous vide egg. Watch out for the spicy paprika kick in the egg that brightens up this dish.

For the Meats, we had Iberico Platters, “Bone-drop” BBQ Iberico Prime Ribs [$39] – 700gm BBQ Iberico Prime Ribs, Cole Slaw, Pineapple Salsa. True to its name, Chef Heman effortlessly pulled out the bones. The meat is very tender, juicy and infused with paprika hickory BBQ sauce. The classic coleslaw is crunchy and creamy, while the pineapple salsa balances the dish nicely.

For the Meats, Steaks, Fish and Chicken dishes, you can choose one or two side dishes to your liking. Those side dishes are Classic Creamy Spinach, Corn Nibbles with Bacon & Cheese, French Fries, Potato Wedges, Baked Potato with Sour Cream & Bacon, Mushroom Ragout, Smashed Potatoes, Coleslaw, Seasonal Veggies, Onion Rings, Butter Rice, and Sous Vide Egg with Brown Jus.
The Menu 
Angus Beef Short Rib [$30] – 120-Day Grain Fed Angus Beef Short Ribs. This dish is brought to your table, covered with a glass dome filled with smoke. Once settled, the service staff will slowly remove the dome and the smoke will slowly dissipate, leaving this dish infused with a smoky aroma. The beef short ribs are braised to fork tender and served on top of smooth and creamy mashed potatoes. The additional red wine sauce on the side adds the OMPH factor to this dish. A comforting dish for me.

Cajun Blackened Barramundi Fillet [$25] – Grilled Barramundi Fillet, Cajun Spice, Pineapple Salsa. A Southern-style dish, where the fish is coated with spice blend and seared on a hot pan. The searing released a lovely aroma, while the spices absorbed into the fish and created a nice black crust on our barramundi fillet. It is plated with pineapple salsa and a wedge of lime.

My Premium Fish & Chips [$18] – Battered Barramundi Fillet & Tartar Sauce. A perfectly fried barramundi fish fillet. The exterior is crispy and crunchy, while the fish remain moist and flaky. Our fish and chips are plated with potato wedges and corn nibbles with bacon & cheese. Not to worry, you can still choose the traditional fries for your sides if you want.

Spaghetti Prawn Aglio Olio [$22] – Spaghetti Chilli, Garlic, Bacon, Prawn, Button Mushroom. The aglio olio here is created using Chef Heman’s Aglio Olio Chilli Paste produced with Kwong Cheong Thye Asian Sauce Manufacturer. This al-dente spaghetti dish can only be described as EXPLOSIVE and not for the faint-hearted, but those who are in for kick, this is the best dish.

We finally reached the desserts. Tiramisu [$9] – Espresso infused Tiramisu, Gelato; Crème Brûlée Cempedak [10] – Burnt Cream, Cempedak, Popping Candy, Gelato; and Deconstructed Apple Crumble [$9] – Green Apple, Popping Candy, Gelato. These trio of desserts round up the lunch nicely.

The deconstructed apple crumble has a light buttery crumble, paired well with a touch of sourness from the green apple and vanilla gelato. The tiramisu is creamy and loaded with a solid shot of espresso. The Crème Brûlée Cempedak takes the crown for me. The Cempedak in the crème just explodes when you bite into it, and it is just rocking when it is paired with the caramelised torched sugar.

Overall, we had a great time feasting on casual American cuisine curated by Chef Heman and his team. Instead of serving the typical classic dishes, Chef Heman incorporates his signature flair to the dishes. Our favourite dishes are Mass Hall’s Oyster Bay, The Burrata Lava Cheesy Wonderland Lovers, The Octopus, Angus Beef Short Rib and Premium Fish and Chips. Not forgetting the Tiramisu and Crème Brûlée Cempedak. Check out The American Mass Hall for your next dining destination!! Cheers!!

Fi Woodfire Thai – A Modern Thai Culinary Concept with A Woodfire Twist [MEDIA INVITE]

Fi Woodfire Thai (“Fi”) Restaurant showcases a modern Thai culinary concept through the dynamic use of fire and curated for the local palate. To deliver a deep smoky richness, Fi uses a double-insulated wood-fire oven with Bincho-tan charcoal for longevity and heat stability, complemented by aromatic lychee wood.

Located at Robertson Walk, Fi is a cosy establishment that seats 40 guests. The restaurant is minimally decorated, merging simplicity and warmth. The main dining area is filled with high tables and chairs for a group of four or six. Meanwhile, the centrepiece of the restaurant is the long bar that double-up as a dining table that can seat up to a dozen of guests.

The Bar
We started our adventure at Fi with drinks. Thai Ice Lemon Tea [$8] and Sabai [$20]. The Thai Ice Lemon Tea is potent, thick and strong. I initially asked for no sugar, luckily the service staff recommended a bit of sugar, to remove the bitterness from the tea. A good recommendation.

LD choose a cocktail, Sabai. Sabai mean “to relax” in Thai, this cocktail mixes Mekong rum with a squeeze of lemon, simple syrup, and fresh basil leaves for a refreshing mid-day tipple. LD says it is refreshing and the bartender is very generous with the splashes of rum as well.

Charred Corn Som Tum [$14]. Traditional Thai Som Tum complete with its ingredients Shredded Papaya, Cherry Tomato, Long Bean, Dried Shrimp, Onions, Chilli Padi, Garlic, Fish Sauce, Lime Juice and Peanuts. The salad is refreshing with a touch of spiciness and the grilled corn is absolutely delicious. Smoky, charred, sweet and juicy. A good start to the meal.

Basil Minced Pork on Charred Eggplant [$18]. I usually don’t eat basil minced pork in a Thai restaurant, because it is usually very spicy. The version here is mild in spiciness, aromatic, sweet and packed with flavour. I also make an exception for the eggplant, the texture is smooth, crunchy with a nice smoky flavour and a nice grilled mark on the inner part. It provided an excellent base for stir-fried basil minced pork.

French Poulet [$28] - Grilled Half Gg French Poulet, Chicken Liver, Jaew Sauce. The refined version of grilled Thai Chicken (Kai Yang). The French Poulet is juicy, succulent and the marinate penetrated to the bone. The meat from the breast and thigh are equally juicy. The marinated sauce is a bit sweet initially, but after a squeeze of lime, the citrus flavour just brings the overall flavours to life. It is best to be eaten with the raw salad.

“Moo Ping” Smoked Pork Ribs (500g Bone In) [$42]. Absolutely, ridiculously, super yummy. The pork ribs’ texture is fork tender, juicy, succulent, well-marinated with a lovely charred crust. It can feel a bit “Jelak” (Overwhelming), but it can easily be fixed with a squeeze of lime or dipping sauce. It is heavenly and finger licking good. #OinkOink #Porkgasm

The Bones
Seafood Pad Thai [$18] - Shrimp, Squid, Egg, Tofu, Sprouts, Chives, Rice Noodle, Crushed Peanuts. This version here is Pad Thai which you get in restaurants / hotels in Thailand. It uses juicy big prawns. I find the taste of the pad thai is too bold for my liking, especially the sweetness level. Although it has a nice smoky flavour at the beginning, it dissipates from the dish after the second bite.

Thai Milk Tea Panna Cotta [$12] - Thai Milk Tea Pudding Served with Coconut Ice Cream and Tea Jelly. A well-plated and well-constructed dessert. The milk tea pudding is dense and creamy. The tea jelly delivers a bold thick flavour of Thai tea, while the coconut ice cream binds all the ingredients nicely.

For spicy food lovers, please inform the service staff when you order the food. The kitchen can adjust the spiciness level for the Som Tum, Basil Minced Pork and Tom Yum. They can also serve cut chilli if needed.

Overall, we enjoy the food at Fi. Don’t expect a traditional street food in Thailand, be open minded to the modern interpretation of Thai Food here that are suitable to pair with their cocktails and drinks. Don’t miss out on their amazing French Poulet & Moo Ping. Chiyo!! Cheers!!

Feng Xiang BKT – Klang Style Claypot Bak Kut Teh + Zi Char Delights [MEDIA INVITE]

Feng Xiang is a Klang-style Claypot Bak Kut Teh born during the pandemic 2 years ago. It started when Mr Harvey Ang, the co-founder was yearning for the robust flavour of his hometown Klang’s Bak Kut Teh and he was unable to “balik kampung” (go back home). Created with family heirloom recipes passed down through generations and the skilful use of 16 premium ingredients and herbs, Feng Xiang BKT evokes memories Klang’s signature taste. As Feng Xiang is well received by the customers, they have expanded to nine outlets around Singapore.

We had our tasting at Feng Xiang Food Republic @ Vivocity. It is a restaurant within the Food Republic, with up to 60 seats.

Herbal Bak Kut Teh (Soup) Regular $8.50. Served in a claypot, the ingredients include pork ribs, sliced pork, tau pok, enoki mushroom, shiitake mushroom and topped with fried beancurd skin. The broth is dark, robust and infused with herbs. The short pork ribs are juicy, succulent and infused with the essence of the broth. For a Klang-style BKT, I like the herbs to be very strong, however, the version at Feng Xiang is milder and can be easily acceptable by everyone.

The Pork Rib
Bak Kut Teh (Dry) Regular $9.50. It is a sweet and savoury dish, cooked with string-thin cuttlefish strips, dried chilli and covered in the sweet dark sauce. The combination of caramelised sweet dark soy sauce, cuttlefish and dried chilli cooked in high heat, push that delicious and irresistible flavour into the pork ribs. What a “Flavour Bomb” and the best dry bak kut teh in Singapore.

Feng Xiang Pork Cutlet Fried Porridge $8.50. Signature fried porridge at Feng Xiang. The porridge is infused with shallots and hae bee (dried prawns), cooked at a very high heat. You can see the “fire show” when the chef cooks the fried porridge. The toppings include fried pork cutlet, pork lard, fried shallots and spring onion. The porridge is fragrant, smooth, creamy and not oily. The fried pork cutlet and pork lard provided a contrasting texture to the dish, and the generous portion can easily satisfy 2 persons.

Starting on 1st March 2024, Feng Xiang is introducing Zi Char favourites chosen by the Malaysian-born Chefs.

Har Cheong Gai (Prawn Paste Chicken Mid Wings), promotional price $4.90*, (original price $7.90) & Har Cheong Crispy Chicken Skin promotional price $2.90*, (original price $4.90). Har Cheong Gai is probably the most ordered dish in Singapore and Malaysia’s Zi Char scene. The version at Feng Xiang is well marinated, packed with umami flavour and crisp externally.

Since we always like the crispy texture of the Har Cheong Gai, Feng Xiang is offering the Har Cheong Crispy Chicken skin as well. It is super crispy and such umami overload. I like it as a snack, but it is also good to eat with the fried porridge. Yum Yum.

Salad You Tiao, promotional price $3.90* (original price $5.90). It has a crunchy exterior, followed by bouncy and tasty squid paste. It is served with mayonnaise dip. Being adventurous, I dipped mine with dry BKT gravy and it was just amazing.

Steamed Fresh Baby Squid, promotional price $6.90*, (original price $9.90). Steamed to perfection, the baby squid is fresh, tender and bouncy. The soy sauce, fried garlic and spring onion paired nicely with the squid. A must-order dish here.

Overall, it was an enjoyable meal at Feng Xiang. The Dry Bak Kut Teh, Har Cheong Gai Crispy Skin and Steamed Fresh Baby Squid are our picks from the delicious food. Cheers!!
