The American Mass Hall – Classic American Cuisine with Vibrant Nuances of Asian Flavours [MEDIA INVITE]

The culinary scene within Singapore’s CBD is vibrant, however, it can be challenging to find classic American Cuisine. The departure of traditional American casual franchises such as Chilli’s, TGI Friday, Dan Ryan and Tony Roma’s left a gaping hole in American casual dining. Recognising the void in the market, Chef Heman Tan, a seasoned culinary professional and co-owner entered this bustling CBD dining scene with The American Mass Hall (“AMH”). An American-theme restaurant, focusing on classic American cuisine with a vibrant infusion of Asian zest, the signature of Chef Heman.

The décor is a blend of traditional American Southern casual steakhouses with a modern touch. The indoor dining tables and chairs use dark colour wood, usually found in a traditional Southern steakhouse. The modern touch comes in their Instagram Sofa section that invites you to take photos, complete with cowboy hats as props.

We kicked off the tasting with Mass Hall’s Oyster Bay [$5 per piece] – Ice Smoked, Japanese Oysters, Orange Granita (min 3 pcs). The oysters made a grand entrance with the dry-iced effect when served on the table. They are plump, juicy and refreshing. The orange granita sparks a citrussy flavour and the balsamic vinegar pearls add a lovely sweetness to the oysters.

Hush Puppy Corn Ball [$8] – Corn Ball, Spicy Mayo. It is a Southern side dish, that originated from Louisiana. Hush puppies are made from deep-fried cornmeal or wheat flour dumplings. It has a crispy exterior and chewy interiors with juicy corn kernels. Served with spicy mayo, it will get your appetite going for the rest of the meal.

Mass Hall’s Baked Garlic Bun [$5] – Garlic Butter, Loaf. Instead of using baguettes, AMH uses hot dog buns. Each bun has a crispy exterior and fluffy interior filled with garlic butter. Extra layer of garlic butter mix will make it even better. LD says that it tasted like old school garlic bread from childhood.

Home Made Mushroom Soup (GF) [$9] – Champignons, Shitake, Cream; French Onion Soup [$9] – Red & White Onion, Vegetable Stock, Gruyere Cheese. Both these soups are made from scratch. If you are gluten intolerant, please inform the service staff and they will leave out the croutons from the mushroom soup. While the mushroom soup is delicious, the French Onion soup is just superb. Sweet, robust and packed with solid vegetable essence. Yummy!

Burrata “Boo-rah-tuh” [$19] – Burrata, Parma Ham, Tomatoes, Watermelon, Balsamic Reduction Salad. Our favourite cheese and salad. The creaminess of the burrata paired well with Parma ham and balsamic reductions. The sweet juices from the watermelon and tomatoes round up the ingredients on the plate nicely.

Continuing with the Burrata theme, The Burrata Lava Cheesy Wonderland Lovers [$24] – Burrata, Mozzarella, Gruyere, Tomato Coulis. This American Sour Dough Pizza comes in oval shape and is loaded with generous toppings of triple cheese. It is creamy, cheesy and it has that WOW pull cheese effect when we take a slice.

Chili Crab Mac & Cheese [$18] – Crab Meat, Mac & Cheese. An American classic dish with a local twist. When I had my first bite of just mac and cheese, the “Jelakness” just hits me. But once I incorporated the Chilli Crab, the spicy and tangy sauce just cuts through the overwhelming richness from the creamy cheese and balances this dish nicely.

The Octopus [$22] – Sous Vide Octopus, Mashed Potato, Sous Vide Egg. Super tender octopus, combined with velvety mashed potatoes and sous vide egg. Watch out for the spicy paprika kick in the egg that brightens up this dish.

For the Meats, we had Iberico Platters, “Bone-drop” BBQ Iberico Prime Ribs [$39] – 700gm BBQ Iberico Prime Ribs, Cole Slaw, Pineapple Salsa. True to its name, Chef Heman effortlessly pulled out the bones. The meat is very tender, juicy and infused with paprika hickory BBQ sauce. The classic coleslaw is crunchy and creamy, while the pineapple salsa balances the dish nicely.

For the Meats, Steaks, Fish and Chicken dishes, you can choose one or two side dishes to your liking. Those side dishes are Classic Creamy Spinach, Corn Nibbles with Bacon & Cheese, French Fries, Potato Wedges, Baked Potato with Sour Cream & Bacon, Mushroom Ragout, Smashed Potatoes, Coleslaw, Seasonal Veggies, Onion Rings, Butter Rice, and Sous Vide Egg with Brown Jus.
The Menu 
Angus Beef Short Rib [$30] – 120-Day Grain Fed Angus Beef Short Ribs. This dish is brought to your table, covered with a glass dome filled with smoke. Once settled, the service staff will slowly remove the dome and the smoke will slowly dissipate, leaving this dish infused with a smoky aroma. The beef short ribs are braised to fork tender and served on top of smooth and creamy mashed potatoes. The additional red wine sauce on the side adds the OMPH factor to this dish. A comforting dish for me.

Cajun Blackened Barramundi Fillet [$25] – Grilled Barramundi Fillet, Cajun Spice, Pineapple Salsa. A Southern-style dish, where the fish is coated with spice blend and seared on a hot pan. The searing released a lovely aroma, while the spices absorbed into the fish and created a nice black crust on our barramundi fillet. It is plated with pineapple salsa and a wedge of lime.

My Premium Fish & Chips [$18] – Battered Barramundi Fillet & Tartar Sauce. A perfectly fried barramundi fish fillet. The exterior is crispy and crunchy, while the fish remain moist and flaky. Our fish and chips are plated with potato wedges and corn nibbles with bacon & cheese. Not to worry, you can still choose the traditional fries for your sides if you want.

Spaghetti Prawn Aglio Olio [$22] – Spaghetti Chilli, Garlic, Bacon, Prawn, Button Mushroom. The aglio olio here is created using Chef Heman’s Aglio Olio Chilli Paste produced with Kwong Cheong Thye Asian Sauce Manufacturer. This al-dente spaghetti dish can only be described as EXPLOSIVE and not for the faint-hearted, but those who are in for kick, this is the best dish.

We finally reached the desserts. Tiramisu [$9] – Espresso infused Tiramisu, Gelato; Crème Brûlée Cempedak [10] – Burnt Cream, Cempedak, Popping Candy, Gelato; and Deconstructed Apple Crumble [$9] – Green Apple, Popping Candy, Gelato. These trio of desserts round up the lunch nicely.

The deconstructed apple crumble has a light buttery crumble, paired well with a touch of sourness from the green apple and vanilla gelato. The tiramisu is creamy and loaded with a solid shot of espresso. The Crème Brûlée Cempedak takes the crown for me. The Cempedak in the crème just explodes when you bite into it, and it is just rocking when it is paired with the caramelised torched sugar.

Overall, we had a great time feasting on casual American cuisine curated by Chef Heman and his team. Instead of serving the typical classic dishes, Chef Heman incorporates his signature flair to the dishes. Our favourite dishes are Mass Hall’s Oyster Bay, The Burrata Lava Cheesy Wonderland Lovers, The Octopus, Angus Beef Short Rib and Premium Fish and Chips. Not forgetting the Tiramisu and Crème Brûlée Cempedak. Check out The American Mass Hall for your next dining destination!! Cheers!!

Market Bistro – Wall Street Style Bistro at MBFC [MEDIA INVITE]

Market Bistro is a Wall Street-style bistro, inspired by the bustling food scene in New York’s CBD has opened its doors in the heart of Marina Bay Financial Centre (MBFC). It is run by Eleven Seventeen, the same group that brought you the awesome steakhouses, Meadesmoore and Fat Belly.

The décor is a blend of simplicity and sophistication, combining the theme of black and white with the timeless classic of wood. Market Bistro (“MB”) will serve NEW All-day dine-in menu, pasta set lunch and even cater to lunch takeaway that will include salads and proteins. MB also offers coffee from the award-winning Blacklist Coffee Roaster in Perth.

We started our tasting with Sharing Items. Fried Baby Squid [$15]. They are crispy, tender and bouncy. The homemade aioli is creamy, with a touch of spice, like an XO sauce. When you squeeze the lemon, it adds a zesty spark to the dish.

Deep Fried Camembert (V) [$16] – Truffle Honey & Pickles. LD and I like the crumbly crust of the cubes of camembert and creamy cheese that followed. The truffle in the honey dip is too overpowering for our liking. Maybe they might consider a stronger honey like Leatherwood. The pickles jalapeno is perfect for balancing the creaminess in the cheese.

For the mains, we ordered 200g Grass Fed Ribeye [$34] - Blistered Tomatoes, Mojo Verde & Fries; and Tiger Prawn Bisque [$28] – Fusilli Lunghi, Prawn Bisque, Grilled Tiger Prawns & Chervil.

The Ribeye is cooked perfectly to medium-rare. It is juicy, succulent and not overly fat. The fries are crisp externally and fluffy internally. The blistered tomatoes are bursting with sweetness combined with a lovely charred, while the mojo verde on top of the steak spice up the dish together with the brown sauce.

Tiger Prawn Bisque pasta is a “Flavour Bomb”. The ramen-looking fusilli lunghi pasta is crunchy and chewy like a Korean ramen, soaks up the essence of the robust prawn bisque. The prawns are pan-seared with butter, resulting in a crispy exterior and crunchy meat. The roe inside the super crispy prawn heads, are the key umami to this dish. Yummy!!

We complete the meal here with the delightful Baked Alaska [$12] – Swiss Meringue, Red Berries, Vanilla Ice Cream & Genoise Cake. The Baked Alaska has a nice charred and sweet. Internally, it is filled with red berries, vanilla ice cream and genoise cake. The refreshing and zesty passion sauce is perfect complement to the sweetness of the Swiss meringue and vanilla ice cream.

To accompany our meal, LD had a nice Cabernet Sauvignon house wine and I had homemade Iced Lemon Tea without sugar.

Overall, the food is delicious and packed with flavours. While the plating is simple, bistro style, the menu has been meticulously curated. Definitely, a place to visit in the MBFC area. Cheers!!

One-Ninety Restaurant and One-Ninety Bar – Argentinian Takeover at Four Seasons Hotel Singapore [MEDIA INVITE]

From Buenos Aires to Singapore, award-winning Renato “Tato” Giovannoni (recognised as one of the top 10 bartenders in the world) and culinary and hospitality maestro Alex Resnik, are taking over One-Ninety Restaurant and One-Ninety Bar at Four Seasons Hotel Singapore. This three-month stint will start from 1st August 2023, diners are invited to experience the rich culinary heritage of Argentina.

Every night diners will embark on a culinary journey of Argentina’s food culture, a melting pot of flavours originating from traditional native dishes, flavours brought by the immigrants across the Atlantic Ocean plus the delectable European influences.

One-Ninety Restaurant with South American Wines
One-Ninety Restaurant x Brasero Atlántico (“BA”) – will feature à la carte dinner menu and a six-course Chef’s Table dinner experience (SGD 168 per person) specially curated by Resnik, that showcase diverse flavours and traditional techniques. The dishes are created focused on simplicity, with the most fresh, local and best ingredients, all cooked “a las brasas” (on the grill), inspired by immigrants who arrived in Rio de la Plata. To complement the meal, diners can also look forward to sipping on an impressive selection of South American wines, including malbecs and torrontés, which perfectly pair with the bold flavours of the cuisine. Cocktail flights (SGD 68 per flight) and wine flights (SGD 88 per flight) are also available.

The tasting started with Panera, House-made “Masa Madre” Bread served with Spanish Anchovies and unsalted Bordier Butter. Masa Madre is a traditional and ancient bread-making method, equivalent of sourdough starter. The version here has a soft, pillowy texture with the taste of rye bread. The smooth and silky Bordier Butter compliment the bread nicely, but adding the anchovies into the mix, just create the outstanding umami flavour. Yum.

Octopus Confit
Starters are served family style; Octopus Confit, 2 types of Empanadas, Veal Tongue “Pampa Style” and Aged Provoleta Cheese. Octopus Confit cooked with cinnamon and orange. It is soft, tender infused with zesty refreshing orange flavour. The same texture can also be experienced in the Veal Tongue. It is fork-tender, with a hint of vinegar and topped with Argentinian Salsa Criolla.

BA served 2 types of Empanadas, the most popular street food in Argentina. The non-meat version is filled with leek and provolone, while the meat version is filled with ossobuco (veal shanks). The empanada is baked, resulting in a crisp and crunchy pastry that is not oily. The leak and provolone tasted light and creamy, while the ossobuco is hearty and fulfilling. My pick is the ossobuco empanada.

The Aged Provoleta Cheese is a popular Argentinian dish that uses Provoleta (cheese specifically for grilling) commonly eaten as an appetizer for the chargrilled meat. Traditionally a thick size of Provoleta is placed on a hot grill over charcoal fire until crisped and browned with a gooey just-melted centre. Here, BA seasoned the Provoleta with oregano and topped with Salsa Criolla, this dish is packed with flavour and a must-try for cheese lovers. Just make sure you eat it as soon as it served, before the texture hardens.

For the mains, we have Wagyu Flank Steak, Rib Eye, Whole Baby Spring Chicken, Frog Legs “A la Provenzal” and Gnocchi.

The Wagyu Flank Steak and Rib Eye are cooked the asador way. Each steak is nicely charred, while the interior is cooked to the point of medium rare. The flank steak is on the leaner side, it is tender with a nice bite to it. Meanwhile, the Ribeye is from Entre Todos Farm in Argentina. The meat is tender, juicy and fatty. Yummy.

Frog Legs “A la Provenzal” is not a common sight in restaurants in Singapore. Alex Resnik strongly promotes this dish and it lives up to its reputation. The frog legs are huge, double the size of those we found in our local frog leg porridge. The meat on the frog legs tasted clean, bouncy and flavourful, while the sauce made from butter, garlic, parsley and lemon juice is creamy, fragrant and rich. It is served with potato, which I use to polish some of those delicious sauces. An absolutely must try!!

The roasted Whole Baby Spring Chicken is perfectly done. One of the most underrated dishes in most restaurants, but when you get the paper-thin crispy skin followed by juicy, flavourful and succulent chicken meat, like the version here, it is absolutely gorgeous. I tried the thigh and breast meat; both are moist and tender. The herbs on the skin also enhance the flavours of the chicken nicely. Yummy!

Gnocchi cooked with butter and topped with Pecorino. Is this an Argentinian dish? The fact is over 30 million people in Argentina claim some kind of Italian heritage. Therefore, it is not surprising to have an Italian dish as part of Argentinian food. It has a bouncy and chewy texture, while the flavour from the butter, browned exterior of the gnocchi and the pecorino cheese.

To accompany the main meal, we have the following sides French Fries, Fennel, Beets, Radicchio. The French Fries have a crispy exterior followed by a moist interior. It is seasoned with algae salt where I can taste a bit of saltiness mixed with umami flavour in the fries.

The fennel salad is paired with watercress and citrus (orange and blood orange). It is light, crunchy and refreshing. The beets are a combination of beetroot, egg, mashed potato and quinoa. I like the sweet earthy texture of the beetroot, while the soft-boiled egg and mashed potato add creaminess to this salad.

Radicchio. This salad is served with watercress and endive. It has crunchy with sweet balsamic dressing. It helps to balance the rich meaty flavour of the main dishes.

To the desserts, “Queso y Dulce”, Dulce de Leche Flan, Brasero Sacher Torte, Lemon Mousse and Valrhona Chocolate Lava Cake. Queso y Dulce is translated to cheese and fruit paste. BA use Galician Tetilla Cheese with Quience Jam. A nice pairing where the flavour is more neutral and lighter.

Dulce de Leche Flan is made by simmering milk and sugar in low flames. The texture is soft and creamy packed with caramel flavour. The caramel sauce came out naturally from the flan during the baking and cooling time. Serve together with mascarpone and candied walnut, it is just addictive.

Brasero Sacher Torte is BA version of chocolate cake. It is soft but firm, and the chocolate flavour is rich and intense, especially in the dark chocolate glaze exterior. The Lemon Mousse is a meringue with strawberry coulis. The lemon is folded into the meringue to add a refreshing zesty flavour to the dessert.

Valrhona Chocolate Lava Cake served with white chocolate ganache. Instead of oozing with dark chocolate, the filling in the lava cake is replaced with Yerba Mate, the Argentinian national tea. The result is like a chocolate lava cake filled with green matcha-like cream. The taste from the yerba mate fillings bodes well with the dark chocolate and white chocolate ganache. Yummy.

To end the evening, we are served with surprise Yerba Mate with Dark Chocolate and White Chocolate bites.

Overall, it was an excellent culinary journey of Argentinian cuisine. While some of the dishes look familiar, we find the taste uniquely different due to the use of Argentinian flavour and ingredients. Salud! Cheers!

Moving on to the bar – One-Ninety Bar x Florería Atlántico (World’s 50 Best Bars - #18) is where cocktails are based on the contribution left by the migratory waves that came across the Atlantic Ocean in the 1900s and helped build the country, focusing on local products and how the immigrant communities adapted their customs to the lands. The brainchild of Giovannoni, the spirit of the cocktail list was designed in partnership with Felipe Pigna, one of Argentina’s most notable and influential contemporary historians, exploring the land’s original colonies and its native inhabitants.

Cocktail highlights include Florería Atlántico’s classics such as the Negroni Balestrini (SGD 27), made with gin, Campari, Amaro Averna, eucalyptus, pinon (Pine) and seawater, as well as the El Dorado (SGD 29), a refreshing mix of Cachaça, Manifest, house-made Mate Tereré, sugar cane juice and tropical fruits. To accompany the tipples, a Raw Bar with a selection of crudo will be offered daily.
