COCA Singapore – Fragrant Laksa Hotpot [MEDIA INVITE]

COCA Singapore recently launched a Fragrant Laksa soup base as a part of Coca’s hotpot buffet. Its laksa rempah is made daily along with a fresh blend of lemongrass, dried chillies, galanga and dried shrimps.

For this tasting, we get to try the Regular Buffet Dinner menu, which has more than 70 items to choose from. We tried two soup bases, The Fragrant Laksa and Hua Diao Phoenix Pot. We had tried the Hua Diao Phoenix soup base for home delivery before and we like it. The difference is when you eat at the restaurant, the service staff flambe the chicken with hua diao wine, before putting it in the broth for boiling. The result is a smoky aroma of the wine, without the alcohol.

The fragrant laksa soup base is aromatic and filled with rempah flavour, topped with a generous spread of chopped laksa leaves. While the aroma is fragrant and strong, it does not have a rich coconut milk flavour like the laksa dish that we usually eat. This is good as you don’t want to be overwhelmed by the coconut milk when eating your steamboat.

According to the service staff, it is best to pair the laksa broth with seafood. Therefore, we ordered the prawns, clams, oysters and crab to cook in the laksa broth. The prawns are fresh and already deshell, leaving only the head and tail intact. We enjoy the crunchiness of the prawns without the need to get out hands dirty.

The oysters are a must-order here. Each one of them is around the size of your thumb, fresh, plump and juicy. When you cooked it in the laksa broth, it also removes any trace of the fishiness in the oysters. After we cooked the prawns, clams and crab in the laksa broth, it adds additional sweetness to the laksa broth.

We tried three different sliced meat: beef, pork and lamb. The beef and pork are tender and succulent. For the lamb, if you can’t stand the gamy meat, you might want to give this a miss.

COCA is also known for their speciality fish glue and paste. We tried their fish glue, shrimp paste and fish paste. The shrimp paste is a must order as it was bouncy and packed with shrimp flavour. The fish glue tastes like fishcake, however, it is missing the bounciness. The fish paste turns out to have a similar taste as their fishballs, thus nothing to miss if you do not order it.

The fishball with roe is thick and bouncy, however, the roe is easily hardened, sticks together and missing the popping sound from the fish roe. I highly recommend that you order shrimp wanton and stuffed beancurd. They are awesome and delicious.

To ensure a balanced diet, you need to order vegetables. We like the Tang O and beancurd skin and mushrooms. The Chinese cabbage is good when you add this to the hua diao soup base as it adds sweetness to the broth.

Green Noodle & Vegetables
For carbs, don’t miss out on COCA signature Green Noodle and Thai mama noodle. The green noodle is already cooked, so you just need to blanch them with the broth. The crunchy texture of the noodle can easily be eaten in a dry or soup version, for LD, she loves it with Coca’s signature sukiyaki sauce. While the Thai mama noodle is just made for the laksa soup base.

There are a lot of sauces and toppings to choose from. I find the sesame paste is good, while LD likes their Original COCA Sauce and Thai Seafood Sauce.

You can top up $8 per pax for Buffet Plus, which allows you the selection of Premium Soup Bases, Free flow selected beverages (fresh lime juice, ice lemon tea, lemongrass pandan and water chestnut) and one time serving of their dessert. The East Meet West, a scoop of coconut ice cream, topped with gula melaka and sago. It was delicious that I wanted to order more than one.

The décor of the place is modern and steamboat focus. The tables are closed to each other, so to abide by the safe distancing rules, their seating arrangement will look weird.

Overall, COCA latest Fragrant Laksa Hotpot is going to be a hit with the diners. I like the fragrant and aromatic flavours, with a manageable spicy level. The regular buffet dinner provides an extensive buffet spread, while the additional top-up for free flow of drinks and a dessert is worth the money. Cheers!!

COCA Restaurant – Pao Fan & Premium Broth [MEDIA DROP]

COCA Restaurant Singapore has recently launched their unique version of Pao Fan. Drawing inspirations from their mouth-watering broths, combining them with fresh and premium ingredients, you can look forward to the delicious and comforting meal not only at their restaurant but also at home.


We received our Pao Fan through delivery. The first thing that we notice is each Pao Fan set is separated and packed neatly into 3 different packages. The plastic container contains the steam rice, proteins and vegetables plus it is microwaveable. The second, paper base bowl will contain the condiments / toppings, crispy rice, deep-fried egg floss, spring onions and chilli. The final container is the soup bag, which contains 1 litre of double-boiled chicken soup.

Hua Diao Chicken Pao Fan 
Hua Diao Chicken Pao Fan ($15.90). Its proteins and vegetables are drunken chicken drumstick, milk cabbage (nai bai), shiitake mushrooms and black fungus. The solid double-boiled chicken soup is infused with a high-grade hua diao wine. When we slurp the soup, we can taste the nice aroma with the sweetness of the wine in the broth and it does not have any bitter taste from the alcohol.

I like the crunchy black fungus that compliments the rest of the ingredients, including the combination of steam rice and crispy rice. The drunken chicken drumstick is tasty but slightly chewy. Tasted more like a Kampong Chicken.

Sliced Fish Pao Fan ($15.90). A simpler version of the Pao Fan. It uses double-boiled chicken soup and the sliced fish as the protein. The broth is robust and filled with the essence of chicken, bodes well with the sliced fish and other ingredients.

Seafood Pao Fan ($16.90). I will call this the upgraded version of sliced fish pao fan. Other than sliced fish, you also get prawns and flower claims here. Since the ingredients and the broth are not cooked together, the seafood flavour is not infused into the broth.

CBK Verdict: It is a delicious creation from COCA Restaurant. The flavours are robust, the ingredients are fresh and the broths are very generous. For a small eater, one portion of the pao fan can easily satisfy 2 people.

Li Ji Chuan Chuan Xiang – Jalan Besar [MEDIA INVITE]

Li Ji Chuan Chuan Xiang (“LJCCX”), a renowned Chinese hotpot restaurant serving Chong Qing style skewer hotpot. The LJCCX brand in China already has over 500 outlets in China and its 1st Singapore outlet opened its doors in 2017.

LJCCX Singapore has just launched its second outlet in Jalan Besar. In this outlet, LJCCX will also serve signature private dining dishes by the distinguished Chef Ng Sen Tio. Chef Ng has more than 30 years of Chinese culinary experience, including his last stint at Yàn, National Gallery.

We started the tasting session with Chef Ng signature Lobster Noodle (龙虾伊面, $120 for 1kg). The lobster is fresh and perfectly cooked. The flesh is bouncy and packed with flavour. The best part is the ee-fu noodles, smooth, silky and infused with the essence of the lobster and seafood broth. Yumz! A great start to the meal.

While we were enjoying the lobster noodles, our hotpot broth slowly simmers and reach the boiling point. We have 4 flavour soup base ($18); Mala 麻辣锅底 (清油), Green Pepper Chilli Mala (李记独特青一色锅底, plus $2), Chicken Broth (三鲜鸡汤锅底) and Tomato Broth(番茄锅底).

The soup bases have been fine-tuned to suit the Singaporeans’ lighter palate; if needed, they can also be adjusted to suit your taste. For example, the version of the mala here is less salty and less “mala” compared to those in China. However, they can bring up the “Power” like those in China upon request. On top of the normal mala, the popular Green Pepper Chilli add a unique touch of sourness that will open up your appetite. Like Mala X Tom Yum. Frankly, LD and I are not a fan of mala, so we are glad the flavour is less spicy.

Cooking the Skewers
In most of the hotpot restaurants that we have been to, we notice that the broth is usually very flavourful at the start, then it will become diluted after a few top-ups. The surprising part about the chicken and tomato soup base at LJCCX is that the flavour becomes more intense and robust after a few top-ups. We really enjoy the flavours at the end. Plus, we notice we did not get any MSG attack after the meal. This is a plus point here.

Into the pot are the skewers (50 cents each). This kind of reminds me of lok lok, the stick hot pot that is famous in Melaka. We have Beef with Coriander Skewer (香菜牛肉), Pork with Coriander Skewer (香菜猪肉), Special Recipe Beef (秘制鸡肉) and Special Recipe Chicken. The beef and pork on the skewers are tender, spicy with a strong hint of cumin. To my surprise, the Special Recipe Chicken are juicy and succulent, although it uses breast meat.

Not limited to meat, vegetables also come in skewers, such as winter melon, broccoli, lotus root, potato, pumpkin and mushrooms.

For the plate ingredients, we tried Signature Beef Slices ($8), Chinese Yam ($6), Pork Belly ($8), Fresh Prawn Paste / ball ($10), Sweet Potato Noodle ($5), Fatty Beef Slices ($8), Ring Roll ($4), Pork Collar ($8) and Tang Oh ($5). Don’t expect the super high-end ingredients, considering the price, but the quality of the ingredients that they used are very good.

We ended the meal with 3 Treasure Dessert Plate (三宝金典甜品, $8) from Chef Ng. It is a red bean and banana paste wrapped in pastry, accompanied with watermelon and refreshing ice jelly topped with diced hawthorn flakes. It is a nicely plated Chinese dessert that showcases the skill of Chef Ng and also hoses down the heat from the hot pot. LD is not a fan of red bean but she is pleasantly surprised that the banana in the pastry actually covered the taste of red bean so well.

The décor is spacious, bright and Oriental setting. There are two-level seating areas and private rooms located on the 2nd floor.

Overall, Li Ji Chuan Chuan Xiang at Jalan Besar showcased the perfect reunion between private dining and hot pot. The culinary experience of Chef Ng plays a big part in serving up exquisites private dining menu and we also find the LJCCX hot pot has a diverse range of offerings for mala and non-mala lovers as well. Looks like LD and I will return to try out their other dishes. Cheers!!

COCA – Thai Steamboat at Home [MEDIA DROP]

COCA Restaurant is a well-known Thai hot pot restaurant in Thailand, Singapore and abroad. My first experience with COCA Restaurant in Singapore is at the Ngee Ann City outlet, followed by the branch at Suntec. COCA Restaurant hot pot is known for its fusion between Thai and Cantonese Style of Steamboat and it has stood the test of time against the new wave of steamboat restaurants.

Now, you can bring home COCA flavours with COCA home delivery. LD and I get to try their Hotpot Set A ($82, serves 3 to 4 pax +). This set includes the following:
-Complimentary Mala Fried Rice
-Complimentary Mala Fish Skin
-2 soup bases (we got Signature Hua Diao Phoenix Pot and Tantalizing Tom Yum)
-Prawns, Thinly Sliced Pork Collar, Chicken Fillet

The delivery comes in 2 bags. One for the cooked food, soup base and room temperature ingredients, while the other for cold and chilled items. The soup and suki sauces get additional shrink wrap to prevent spillage. A good first impression.

The Packing
The soup base: Signature Hua Diao Phoenix Pot and Tantalizing Tom Yum. I personally like the Hua Diao Phoenix Pot. The milky colour soup is robust, sweet and flavourful. It is suitable to cook any ingredients in it. The tom yum soup base is aromatic, spicy but on the sweet side. For those who like more sourish type, you might need to add some lime and chilli, to kick it up a notch.

For the meat, sliced pork collar, chicken fillet and prawns. The pork collar is juicy and succulent, but don’t expect those Iberico melt in your mouth type. The chicken meat is tender and absorbs both types of broth nicely. Meanwhile, the prawns are fresh and crunchy. It is also partly de-shell, so you can enjoy it without getting your hands dirty.

Prawn
Chicken Meat Paste, Shrimp Wanton, Fishball with Roe. Surprisingly, the chicken meat paste is juicy and succulent. This reminds me of the handmade chicken meatballs that I ate in one of the famous Japanese restaurants in Singapore. The shrimp wanton is crunchy, as good as that popular Thai frozen wanton brand. The fishball with roe is crunchy, bouncy followed by bursting ikura flavour.

The complimentary Mala Fish Skin is crispy, it remains crispy even after a few hours. It packs the mala punch, those mala lovers won’t be disappointed. The same can be said with the complimentary Mala Fried Rice.

The portion of the vegetables are generous. The green noodles are a must-have for a Thai style hotpot. LD & I will usually order a few plates of this when we are having hot pot in Thailand. The COCA version here is just awesome. This green colour noodle is tasty and al-dente. It is crunchy and bodes well with both soup base. Another way to eat this noodle is to toss it with the signature COCA Thai suki sauce.

Overall, it was a pleasure having a Thai steamboat at home. While we miss travelling to Thailand, at least this steamboat can satisfy our longing for the steamboat there. For Hotpot Set A, the portion is good for 4 small eaters. However, if you are a big eater, I suggest you order more ingredients. The generous soup portions are more than enough for the add-ons.
