Fat Belly Social – The Best Second Cut Steakhouse in Singapore

Fat Belly Social Steakhouse (“FBSS”) is the second concept by the Fat Belly Group, helmed by Executive Chef Victor Loy. Fat Belly is known for its use of the best second cut meat, prepared and presented classically. FBSS is also known to use all parts of plants and animals in its effort to ensure overall sustainability.

We visited FBSS in November 2021, for my birthday celebration. At that time, we are still under 2 people dine-in restriction and FBSS had a promotion Steak Set for 2 at $208. Which include 1 small plate, 2 cuts of meat and 1 dessert.

We started with Grilled Ox Tongue. Thick slices of ox tongue and grilled to perfection. Instead of chewy, the tongue is surprisingly tender and almost melts in your mouth. The shaved fennel is crunchy, while the salsa verde provides an acidic touch to the dish. Of course, for those who like spicy, you can bite the jalapeno that will give you a spicy kick.

Grilled Octopus ($24). Since it is also our favourite protein, we decided to add this to our order. It is smoky and nicely grilled. The sauce on top is made from tripe and nduja (spreadable pork sausage) deliver a creamy with a bit of spicy flavour on it. The shaved fennel adds a touch of crunchiness to the dish. Definitely, did not regret our decision.

For the steak, we have Pure Black Barley-Fed Angus Short Rib and Blue Label Full Blood Wagyu MS8/9 Rib Cap. In signature FBSS style, the steaks are served on a huge communal plate nestle in a grand metal tray. The tray is too big for the square table; therefore, it needs to be elevated with a stand to fit on the table.

Each steak has a nice sear on its exterior, giving them a crispy crust. The wagyu rib cap has a nice marbling, tender and juicy. Meanwhile, the short-rib has a dry-aged feel to it. The meat is succulent with a bit of resilience that delivers a nice bite to the flesh.

The steaks are served with roasted garlic and vine tomatoes. LD enjoyed both with the steak, but I give the roasted garlic a pass, instead, I delve into the juicy vine tomatoes.

For the sauce, we ordered bordelaise and salsa verde. Bordelaise sauce is rich, creamy but with a touch of acidity. It is made from dry red wine, bone marrow, butter and shallots. However, the salsa verde just hits the spot for us. As the steaks are rich and fatty, the acidity from the salsa verde helps to cuts the richness from the steak.

For the side dish, we order Crusted Mac & Cheese. Highly recommended by our service staff. Instead of the usual macaroni, FBSS use casarecce pasta, grated truffle and three cheese. The pasta is more chewy compare to the regular macaroni, while the grated truffle and cheeses are rich, umami and satisfying.

Dessert is Burnt Cheesecake with Raspberry sorbet. The burnt cheesecake presentation is Instagram worthy, the middle part of the cheesecake was oozing when it reaches our table. The exterior has a nice bitter burnt flavour, good to offset the solid, rich and pungent cheese. The raspberry sorbet is just yum, plus it helps to cuts through the strong cheesecake. The sorbet is so good, I don’t mind having a scoop of it on its own as a dessert.

The décor of the main dining area has a simple and classic feel to it. The wooden floor, with green and white wall, remind you of a barn. While the animated animal paintings on the wall, showcasing the happy protein on the menu. The seats are catered to different group sizes. At the entrance, you have the bar area, followed by an oval marble table for communal dining plus square tables in the middle and at the windows, you have a settee area with square tables, which can be easily moved to accommodate bigger group dining. Service is friendly, knowledgeable and excellent.

Overall, it was a great experience dining at the second Fat Belly Concept. The menu is well-curated and the overall dining experience is just memorable. I like the way FBSS uses more parts of the animals and plants, hopefully, they will introduce nose to tail dining experience in the future. Looking forward to our next visit here. Cheers!!

Golden Peony – 2022 The Year of The Tiger [MEDIA INVITE]

Celebrate the arrival of the year of the Tiger with the sumptuous and bountiful meal at Golden Peony. This year Chef Ku take inspiration from his Hakka root to create the stuffing for Golden Peony Roasted Signature Suckling Pig.

The dinner starts with Impossible Meat Amuse Bouche. Deep-fried “meatball” topped with mayonnaise and microgreens. The ball has a crispy exterior, followed by a juicy and succulent interior. If we were not told that it was impossible meat, we would have assumed it was a pork meatball.

Fortune ‘Yu Sheng’. A Singapore Chinese New Year Tradition. This year, the Yu Sheng come with tiger prawns, snow crab, hamachi, crispy whitebait and fish skin. A refreshing multi-texture combination. The tiger prawn is juicy and crunchy, while the snow crab is sweet and combine well with the hamachi. The ice lettuce and the fresh vegetables in yu sheng is a mix of sweet, earthy and also refreshing, such unique texture.

Water Bamboo Shoot – Poached with Parma Ham, Pumpkin Broth. A beautifully plated dish. The pumpkin broth tasted light and clean, although it looks thick and dense. The water bamboo shoot is crunchy and infused with subtle flavour from the ham.

New Bedford Scallops – Beetroot Sauce, Tempura Broccoli. The scallop is perfectly cooked and has a nice seared to it. It is sweet and moist, plus I like the crumble on top, tasted like the deep-fried XO sauce. The tempura broccoli is crunchy but a bit bland provided a canvas to allow the beetroot sauce to shine.

Hamachi Collar – Braised with Ginger, Scallion and Chinese Wine in Claypot. LD’s favourite fish and also cuts of the fish. The flesh is soft and moist, coated with a delicious sauce infused with ginger, scallion and Chinese wine.

Sea Cucumber and Pork Knuckle – Stewed with Chinese Spices, Goose Web, White Asparagus. This is like a mini “pen cai” for me. Collagen loaded ingredients, robust and rich gravy. The sea cucumber is silky and bouncy, while the pork knuckle is forktender and melts in your mouth as well. Not forgetting the delicious goose web. Give me a bowl of white rice and I am a happy man. Yummy!!

Lobster – Baked with Custard and Mozzarella Cheese, Sichuan Peppercorn Sauce. It is crispy externally, followed by bouncy lobster flesh. The combination of custard and mozzarella cheese created a nice umami crust, while the peppercorn sauce gave a spark to the dish. The lobster is served on a wooden box, filled with dry ice under it. The smoke that came out from the box just brought up the dish to another level.

Roasted Suckling Pig – Stewed Hakka Pork Belly with Preserved Vegetables, Japanese Fragrant Rice. This year Golden Peony Signature Suckling Pig leave a lasting impression on me. As a Hakka, pork belly with preserved vegetables is a special dish to us. Having this dish, mixed with rice and stuffed inside a sucking pig is just unimaginable, yet enticing at the same time. It is just a different level of #Porkgasm.

Chilled Peach Jelly – Snow Pear, Peach Resin. A sweet and refreshing end to the meal. Served together with the chilled peach jelly is the baked pastry, Lau Po Bing (Cantonese Wife Cake). To signify this auspicious year of the Tiger, Chef Ku renamed this pastry Lau Hu Bing (Tiger Cake).

[CLOSED] 6ixty 7even – A Classy Restaurant & Bar [MEDIA INVITE]

6ixty 7even is a classy restaurant and bar, located in the trendy Tanjong Pagar district that delivers a sumptuous dining experience through its Modern European Cuisine and extensive range of wine, whisky, sake, beers and cocktails.

The Bar - 1st floor
The restaurant has 3 levels which feature, bar seating area on the first floor complete with an open kitchen where you can see the bartender and chef at work. On the 2nd level, they have a settee area for comfortable dining plus a whiskey lounge. Meanwhile, the 3rd level will host a private dining room. I find the décor swanky and elegant, allowing the guests to be comfortable and relax over drinks and food.

We started our tasting with Szechuan Spicy Chicken Karaage ($12). Crispy and succulent, jumbo size chicken popcorn. The batter is well seasoned and the finishing touch of Szechuan sauce is just addictive. LD and I do not have a high tolerance of Mala spiciness, so we ask Chef Ramesh to tone down on the spicy level. Having said that, for those who love Mala, you can ask them to amp up the heat factor for your indulgence.

Truffle Fries with Gruyere Cheese and Truffle Aioli ($15). A nice nibble that everyone like. The shoestring fries are crisp and moist, topped with generous shavings of gruyere cheese. I like the truffle aioli dip, it is solid but not overpowering the rest of the flavour.

Assorted Sausage Platter ($16). Consist of chicken, pork and lamb sausages served with dijon mustard and caramelised onion. The chicken sausage is juicy and succulent, while the lamb sausage is filled with herbs and seasoning, similar to those in the lamb tikka recipe. The pork is slightly harder and saltier to my liking; however, it is suitable to pair with drinks.

Locally Farmed Barramundi ($28). A perfectly executed dish. The fish fillet with crispy skin followed by moist and velvety flesh. Served with petite vegetables, roasted vine tomatoes, potato puree, tarragon and citrus beurre blanc deliver a multi-texture and multi-layer of flavours in each bite. Yummy!

Smoked Bacon Carbonara ($24). A modern interpretation of fettucine carbonara. The al-dente pasta is coated with smoked bacon cream, chopped smoked bacon, parmigiano cheese, crispy rice and vegetable garnish. When you are served this dish, be careful of the surprise ingredients nestled in between the fettucine. It is good, but we find it can have more OMPH on the bacon.

Although you might be full from the food and drinks, you need to save a space for their Chocolate Dessert. Chocolate dome served with raspberry coulis and meringue. The chocolate dome is rich and solid, well balanced with the acidity from the raspberry coulis. The mini meringue together with biscuit crumbs provided a different texture to this dessert. Yumz!!

Overall, we had a great time dining at 6ixty 7even Restaurant & Bar. The snacks part of the menu is geared up toward the lovable bar bites, however, the pasta and main menu show a lot of potentials. The plating is simple, elegant and the food is delicious. I look forward to future creations from the culinary team at 6ixty 7even. Cheers!!
