Po – Signature Singapore Favourites

Po is a concept by Lo & Behold Group, known for its bold, edgy and innovative concepts. Po is the flagship restaurant of The Warehouse Hotel, which is also the inaugural boutique hotel by the group. The name Po is shortened from Popo, meaning grandmother, paying tribute to her contributions to Singaporean favourite home cuisine. You will get to know her when you open the menu in the restaurant.

Entering The Warehouse Hotel, you will be welcomed by the enormous lobby, with an industrial look and high ceiling, decorated with different sizes and motifs of wheels. You won’t miss the huge bar in the lobby, complete with an extensive seating area for the patrons to chill and enjoy their drinks. On the right side after the entrance, you will find Po restaurant.

The décor at Po provided a more intimate dining experience. Nicely decorated round tables with rattan chairs, a combination of a modern dining experience with a nostalgic feel. A must-order here is the popiah, hinted strongly at the setting on the tables.

Dinner started with Belinjo Crackers ($9) served with belachan and kecap manis dip. Po served the sweet version of the belinjo crackers. It is crispy and crunchy, followed by a mix of sweet and bitter flavours. The belachan is spicy, fragrant and got POWER, according to the group.

Since everyone liked the Belinjo Crackers, we also ordered Indonesian Prawn Crackers ($9), also served with belachan, kecap manis dip. However, the prawn crackers were isappointing. There is almost no prawn flavour in the crackers and it tasted a bit dense. Stick with the Belinjo Crackers.

Soft-Shell Crab ($22). It can easily be mistaken for har cheong gai. The batter is covered the soft-shell crab to the point you can’t see the crab shape. However, the batter delivers a super crispy texture, followed by the juicy flesh of the crab. The batter is very tasty on its own, you can eat it without the lime mayo.

Otah ($18). My first impression when I bit into it was SOLID. The otah is dense, packed with mackerel, prawn paste, jumbo crab meat and homemade heritage spices. I can taste the fish, the crab meat and I am comfortable with the spiciness level. Yumz!

Charcoal-Grilled Iberico Satay ($24). Thick, plump and succulent pork skewers grilled to perfection. The meat is well seasoned and I can taste the lovely charred on the edges of the satay. The satay sauce with the pineapple is not rustic enough, I find it missing the OMPH. It will be nice to have the ketupat as well.

Popiah Classic ($32 for 1 – 2 persons, 4 skins). Since we have 6 people, we decided to order 2 sets of the Popiah Classic. The set is nicely presented. The popiah skin is served warm. It has the right thickness, soft yet bouncy at the same time.

The key ingredient is the fillings, made with pork, shrimp, bamboo shoot, bangkuang (jicama), carrots and holland peas. Stewed over a long period, the ingredients get caramelised and create a unique umami flavour. Wrapped together with sprinkles of eggs, crushed peanuts, crispy flatfish, crispy shallots, coriander sprigs, beansprouts and sweet sauce. Housemade chilli sauce and freshly ground garlic are available, but they are not getting into my popiah.

The Fillings
The fillings and sprinkles provided are very generous, we have a lot of leftovers. Luckily, you can order extra servings of the yummy popiah skin, to finish off the ingredients. Yum Yum.

Kurobuta Char Siew ($20). The pork collar has a nice balance of meat and fats ratio. It is cooked to the point the middle part of the pork is still pink. It has a sweet, juicy, crispy exterior and melts in your mouth. Awesome.

Paper Spring Chicken ($68). It took 45 minutes of preparation time, so it arrived when we almost finish our popiah. The whole spring chicken is stuffed with glutinous rice, conpoy, dried shrimp, chinese sausage and mushroom. During the baking process, the essence of the chicken is infused into the stuffings, while the stuffings also flavoured the chicken and help the chicken to retain its moisture. The chicken is well seasoned, juicy and succulent, however, without a doubt, the start of the dish is the rice.

We conclude our meal with Giant River Prawns Konbu Mee ($38). Po version of Hokkien Mee. The noodle is cooked with fresh river prawns, prawn stock, pork belly, pork lard and Sakura ebi. When you slurp the noodle, it was just exploding with flavours. The river prawns are sweet and fresh; however, the pork lard is too crispy for my liking.

The drink menu at Po is very extensive as it combines with the bar menu as well. It has 12 signature cocktails on the Po menu and it will be rotated regularly. I ordered mocktails Spritzerlati ($17) Melati Distilled Botanicals, citrus syrup, soda. It is refreshing, yet I can taste the depth of flavours in it.

The service is professional, attentive and helpful. The service staff knows the majority of the cocktails & mocktails plus they also help us to get extra services of belachan.

Overall, it was a great experience dining at Po. While the food might seem familiar, the team at Po elevated those using better ingredients and modern cooking techniques. The menu might be slim; however, they try to produce the best version of each dish. I recommend Po’s Otah, Softshell Crab, Popiah Classic, Char Siew and Paper Spring Chicken. Cheers!!

Mott 32 – Exquisite Chinese Dim Sum

Mott 32 at Marina Bay Sands Singapore (“Mott 32”) is an authentic Chinese restaurant that utilises modern & innovative cooking techniques from around the world to bring out the best of authentic Chinese recipes. The name Mott 32 pays homage to 32 Mott Street in New York, where the city’s first Chinese convenience store opened in 1891. Mott 32 Singapore is the 4th Mott 32 restaurant globally, including Hong Kong, Las Vegas, Vancouver and Bangkok.

When I first step into Mott 32, I was impressed by the décor of the restaurant. A classy oriental design, complete with flora motifs around the dining area of the restaurant. In line with the current trend, the sight of the grand Mott 32 bar is not to be missed, where the mixologist will prepare drinks inspired by the Chinese culture and the flavours of Asia.

We started our meal with a bowl of soup. I choose Fish Maw, Conpoy, Garoupa Soup ($25). The milky colour broth is creamy, tasty yet subtle. It is infused with collagen from the fish maw and umami from the conpoy.

Signature Crispy Sugar Coated Peking Duck Bun ($12, 3pcs). The baked bao has a nice and crispy skin. The duck fillings are juicy and not too sweet. Although the charcoal bun is coated with icing sugar on top, the sweetness is almost unnoticed, instead, it binds the bun and fillings nicely.

Dim Sum Platter ($13), consisting of South Australian Shrimp, Prawn, Hot & Sour Shanghainese Soup Dumpling; Black Truffle Siew Mai; and Wild Mushroom, Water Chestnut Crystal Dumpling. A lovely combination on the basket. The mushroom crystal dumpling is chewy and bursting with flavour. The siew mai is juicy, with quail egg inside it and a hit of truffle. The mala XLB is very good, filled with hot and sour soup that was subtle, enough to entice your palate instead of numbing it.

King Prawn Har Gow ($12, 4pcs). The barometer of dim sum standard in a restaurant. The Mott 32 passed with flying colours. The har gao is big, plump and juicy. The skin has a nice bouncy texture and holds the prawn fillings very well.

Australian Wagyu Beef Puff ($12, 3pcs). The layered pastry skin reminds me of deep-fried prawns in vermicelli noodles. However, instead of crispy noodle, the filo pastry is crispy and crumbly, filled with black pepper wagyu beef. It was so good; I can finish the whole plate of this puff.

Cold Free-Range Chicken, Szechuan Peppercorns, Chilli Sauce ($26). Served chilled, the chicken is firm and tasty. While the sauce looks fiery, the taste of the mala is very subtle. It delivered controlled and complex mala flavour without numbing your tongue. The crunchy fried garlic on top adds a different texture to the dish and breaks the “mala spell” on your palate.

Chicken, Prawn, Taro Croquette ($13, 3 pcs). The exterior of the taro croquette is light, crispy and fluffy. The fillings of chicken and prawn are packed with flavour and paired well with the taro pastry.

Pan Fried Turnip Cake, Dried Scallops and Japanese Sakura Shrimp, Dong Guan Sausage and Shrimp ($13, 4 pcs). Without a doubt, it is the tastiest turnip cake I have tried so far. The exterior is crispy and full of the crunchiness and umami flavour from the Japanese Sakura Shrimp. The take itself is a blend of softness and bouncy texture, filled with dried scallops and Dong Guan sausage. Yum Yum.

Crispy Egg Noodle, Stir-Fried Egg White with Prawn, Scallop, Conpoy ($38). LD’s favourite noodle. The egg noodle is crispy and springy, covered in egg white gravy and full of the bounty of the sea. The scallops are juicy and the conpoy gives the umami OMPH in this dish. A must-order dish here.

Desserts were Lotus Seed Paste Puff, Red Bean Curd ($10) and Coconut, Water Chestnut, Glutinous Rice Roll, Crushed Nuts ($10). The lotus seeds puff exterior is crisp and crumbly, topped with aromatic roasted sesame on top. It is a modern twist to the traditional red bean paste pancake.

The Coconut, Water Chestnut, Glutinous Rice Roll, Crushed Nuts shows the creativity of the team at Mott 32. The water chestnut glutinous rice roll is chewy and tasty, coated with finely grated coconut shavings and rich coconut milk. The crushed nuts sprinkled on top added a crunchy texture to this awesome dessert.

Service is meticulous, professional and slick. They make sure that you are taken care of from start to finish.

Private Dining Area
Overall, it was a great dining experience. While the dim sum menu is limited, they ensure each one of them is to the highest standard. I recommend the Signature Crispy Sugar-Coated Peking Duck Bun, Australian Wagyu Beef Puff, Pan-Fried Turnip Cake, Crispy Egg Noodle, Stir-Fried Egg White with Prawn, Scallop, Conpoy and Coconut, Water Chestnut, Glutinous Rice Roll, Crushed Nuts as dessert. Cheers!!

Golden Peony – Blossoming Fortune 2023 [MEDIA INVITE]

Golden Peony pays ode to the delights of the Lunar New Year with a menu that promises to set you up for a year of happiness and well-being in the year of Water Rabbit. Executive Chef Ku and his team have prepared deliciously decadent dishes with lobster as the main theme.

We were welcomed to the dinner by Chef Ku Grand Yu Sheng, which has been missing for the past few years due to the pandemic. While you usually tossed the Yu Sheng per table, this grand design by Chef Ku allows up to 20 to 30 diners to do it together. A cheerful and vibrant experience.

This glamorous Yu Sheng is filled with luxurious and delicious ingredients. It has juicy and crunchy baby abalone, sweet lobster sashimi, fresh salmon sashimi, crispy fried fish skin and aromatic mock meat bak kwa. The refreshing homemade plum sauce bound all the ingredients together nicely. A great start to the feast.

Boston Lobster, Steamed with Egg White and Chinese Wine Broth. (祥 龍 碧 珠 – 鸡油花雕波士顿龙蝦). This dish is all about showcasing the natural flavours of lobster. It is steamed to perfection; the lobster meat is light, sweet and bouncy, while the velvety egg white just absorbs the essence of the lobster enhanced by the Hua Diao Wine. The small cucumber ball compliments the dish with a contrasting crunchy and bouncy texture. Super delicious!

Yam Abacus Seeds Wok-fried with Plant Based Meat, Dried Shrimp Served with Crispy Carrot Cake (粒 粒 有 錢 算 - 客 家 植 物 肉 算 盤 子 伴 萝 卜 糕). Inspired by his Hakka roots, Chef Ku elevated this traditional Hakka dish by pairing it with crispy carrot cake. I tasted lovely crispy carrot cake, followed by chewy and bouncy Hakka yam abacus seeds. Traditionally, the abacus seeds are fried with minced pork, dried shrimp and superior soy sauce; However, Chef Ku has replaced the minced pork with Plan Based Meat. I must say, with the explosion of flavours in this dish, I did not miss the taste of the minced pork or even be aware of it if it was not mentioned on the menu.

Tooth Fish Baked with Honey-Glazed Sauce Sweet and Sour Green Mango Salad (齒 頰 留 香 - 香 烤 叉 烧 齒 魚). Tooth Fish or Chilean Seabass is known for its flaky moist flesh and contains lots of Omega 3 fatty acids. The honey-glazed sweet sauce caramelised during the baking process, giving the fish a crisp exterior followed by delicious fatty flaky flesh. The sour green mango balanced this fatty dish nicely.

Roasted Suckling Pig Lobster Meat Japanese Fragrant Rice, Superior Lobster Broth (特 色 龍 吐 珠 - 龍 蝦 泡 飯 烤 乳 猪). One of Chef Ku’s signature Chinese New Year dishes. This year, the stuffing of the sucking pig is lobster meat, Japanese fragrant rice cooked in Superior lobster broth. When Chef Ku chopper cuts through the thin crispy, the crackling sound was just a symphony of the coming treat.

Each portion of the suckling pig is plated with superior lobster broth, crispy rice and suckling pig sauce. The layer of the sucking pig provided a crispy skin followed by juicy and succulent flesh. The Japanese rice is fragrant and plump, as it absorbs the essence of the piggy and superior lobster broth. The lobster flesh is bouncy, more like a lobster ball texture. I like to have the broth in between each bite of the rice and lobster stuffing, it gives more OMPH to the lobster flavour. Yum Yum!

In line with the Water Rabbit year, the dessert is Rabbit Soy Pudding Aloe Vera, Lemongrass Jelly, Peach Resin, Rainbow Pearl (月 影 玉 兔 - 豆 奶 玉 兔, 七 彩 珍 珠 桃 胶 蘆 薈 冻), Snow White with Green Tea Paste (白 玉 无 瑕 - 雪 地 玉 兔 糯 米 糍) and Crispy Green Tea Pastry (甜 上 心 头 - 金 牡 丹 緑 茶 萝 卜 酥).

It is rabbit overload. The rabbit soy pudding has a smooth and bouncy texture, sitting on the refreshing aloe vera, lemongrass jelly, peach resin and rainbow pearl dessert mix. While the rabbit green tea paste’s light and delicate texture are complemented by the crispy green tea carrot. A beautifully plated dessert.

For a more traditional dessert, you can choose the Homemade ‘Nian Gao’, Sweet Potato and Yam (金 薯 芋 頭 年 糕). This combo trio are coated with crispy and crumbly crust delivering a comforting multi-texture and multi-flavours of Lunar New Year. It is something that I always look for when dining in Golden Peony during the CNY period.

Overall, it was another superb and delicious CNY feast and the choice of lobster as the main theme just brought the overall menu to another level.
