Marina Mandarin Singapore is celebrating Singapore's 52nd Birthday by bringing you the contemporary local favourites, with a twist. This special dishes will be available from 1st August to 9th August 2017.
Highlights of the sumptuous Halal-certified buffet spread are:
Singapore Chilli Softshell Crab. This is one type of Chilli Crab where your hands will remain clean after eating it. The sauce is tangy, creamy with a subtle kick of spiciness. The softshell crab has a crispy exterior with juicy flesh. Don't miss out on the fried bun, this will help you to polish up the delicious sauce.

Wagyu Beef Short Rib ‘Satay’. Wagyu Beef Short Rib marinated with satay seasoning, sous vide, then into the oven. It is tender and succulent, with a slight chewiness from the tendon around the short rib. Top it up with the homemade peanut gravy, you have the luxurious version of beef satay.

|Seafood in Kueh Pie Tee with Laksa Espuma|
Prawn and Ravioli in Nonya Curry. Easily the best dish of the day. The prawn ravioli is solid and crunchy. Mixed it together with the rich nyonya curry plus the fresh prawn, it is probably the ultimate Modern Singaporean cuisine for me. Kudos to the chef and Definitely a must try dish here.

Mini Tandoori Chicken Slider with Mint Jam. Wholesome mini bites with succulent Tandoori Chicken. Though the tandoori chicken in delicious, I find the bread a little dry for my liking. I wish there is more of the jam or sauce to with this dish.

This time around, I got try the Roasted Whole Leg of Lamb and their country style beef pot. These dishes are just delectable for meat lovers such as myself. I also suggest you keep some space for their durian desserts, either it is the durian cake or durian pengat. This time around, I get to nibble on the delicious jackfruit.
Overall, AquaMarine has definitely up their game in the celebration of Singapore's 52nd Birthday. Their creativity in creating a modern version of traditional Singapore cuisine need to be savour. Due to limited availability, check out the details below. Cheers!!
