Dashi Master Marusaya – 7th Anniversary [MEDIA INVITE]

Dashi Master Marusaya (‘DMM’) celebrated its 7th birthday last November with the launched of daily seasonal fish air-flown from Japan, six different kinds of dipping sauce, 7 delectable condiments to go with its signature Dashi Shabu and mouth-watering pork ramen using the restaurant’s signature Dashi broth.

LD and I were invited for the Media preview of the latest menu. We started the tasting with Today’s Appetizer, usually served as part of Signature Dashi Shabu Course. Egg Custard with Uni. Served chilled, the custard is smooth, silky yet subtle allowing the freshness of the uni to shine.

Next come the Dashi Shabu A la Carte (A5 Wagyu Melting Part) - $98. This includes choices of 2 dipping sauce, additional $2 for each extra choice. The dipping sauces selections are: Ponzu Vinegar, Sesame, Sour Plum, Leek Sesame Oil, Sukiyaki and Yuzu Rice Malt. The Dashi Shabu A la Carte also includes Homemade Udon or Japanese Porridge.

With the 7th Anniversary, Dashi Master Marusaya has also enhanced its Dashi Shabu with freshly shaved Katsuobushi (dried bonito flakes) cooked on the table, adding to the sweetness and depth of the broth.

The A la Carte shabu comes with assorted vegetables. The flavour created by the vegetables working in tandem with the dashi broth is just amazing. It is good to try the broth first before adding the wagyu. If you prefer your broth to be stronger, I suggest you add dashi salt into the broth or to your personal bowl. LD and I find that it just “kick up” the umami flavour another notch. If you need more vegetables, you can order them at $12 for assorted vegetables and $4 for lettuce.

The A5 Wagyu Melting part is the highest and best part of the wagyu served here. The marbling is consistent across the cuts and once you put it in your mouth, the melting sensation is like no other. Yummy! #Wagyugasm

DMM also revamp their menu to introduce A la carte oden. Deep-Fried Beancurd with Rice Cake ($9), Japanese Fish Cake "Chikuwa" ($5), Japanese Fish Cake "Hanpen" ($5) and Deep-Fried Beancurd with Ingredients ($5). Look at it as Japanese Yong Tofu version.

While most of the oden are good, my personal favourite is the deep-fried beancurd pouch with rice cake. The beancurd pouch is flavourful, while the rice cake inside is soft and absorbs the beancurd and umami broth flavour. There is also a hint of fishcake in it.

Black Fungi ($5) and Arrowroot Starch Noodle ($5). Not only healthy, black fungi provide a nice crunchy texture. Arrowroot starch noodle is smooth, silky and light. It is like a sponge that absorbs the flavour of the broth.

For the carbs, we have a choice of Udon and Rice Porridge. LD and I will personally recommend the udon. Not only it is made in house, the thick and bouncy texture is just superb. We had specially returned to DMM for the Udon dishes during lunch before and during the pandemic.

Ending the meal at DMM is Sweet Potato Cake and Sweet Potato Ice Cream ($10). The desserts are nicely plated, the sweet potato cake has a dense texture and you can taste the fibre of the sweet potato as well. Opposite to the cake, the taste of the sweet potato in the ice cream is very subtle, it can easily be mistaken for vanilla ice cream.

Since LD can’t take sweet potato, she chooses brown sugar ice cream. We strongly recommend you try this next time you are here. It is not overly sweet, yet the taste of the brown sugar is very prominent. Yumz!

Overall, it is great to be back at Dashi Master Marusaya. The food remains impressive and we like the enhanced version of the dashi broth. The new A la carte oden is also a hit, as you can choose the type of oden that you like. Kanpai! Cheers!

SO/ Singapore – Christmas Brunch 2021 [MEDIA INVITE]

Roast Turkey @ Xperience
Santa is SO/ coming to town, come and celebrate this festive season ith over-the-top feasts done the SO/ audacious way through Christmas Brunches, Dinners and Takeaways. In-house dining will take place at Xperience, a vibrant all-day restaurant and bar known for its tantalizing cuisine and attentive service. Chef Nyon Yan Quan has taken the lead this time around and has curated a sumptuous meal for us to savour.

We were invited to try the Christmas Brunches and we started the meal with Xperience Signature Over-Flowing Brunch Tower. Consist of 3 levels of treats, from savoury to sweets. At level 1, we have overflowing platter filled with appetizer, artisanal cold cults, cheese and brunch items.

The Beef Con Carne Tortilla Chips with Cheese hits the sweet spot in me. It is thick, robust and bursting with flavour, sitting perfectly on crispy tortilla chips. Together with smoked salmon and wild rocket salad, it was a nice start to the meal.

Moving to Level 2, you are treated with Bounty of the Sea. I enjoy the flesh of the Garlic Butter Roasted Boston Lobster. Most of the time, I enjoyed my Alaskan King Crab served on an iced bowl, it takes a bit of getting used to having it served at room temperature.

Level 3 are reserved for desserts and you must pace yourself and keep some space for them at the end of your meal. However, before I go to level 3, let’s take a detour to the free flow Carving Stations. A sampler platter will be served to your table to start, you can then inform the service staff of additional dishes that you want to add.


Whole Roasted Turkey. Perfectly roasted. The dark meat is juicy, succulent and packs with flavour. Meanwhile, the white meat part is lean, yet moist. The gravy complements both cuts nicely.

Homemade Honey Baked Ham. Served in generous thick slices, I like the smokiness of the flesh. It is very meaty, therefore best enjoy with the braised purple cabbage.

Mediterranean Spiced Roasted Striploin. Roasted to medium-rare, each slice of the striploin is pink in the middle. The fats from the top of the sirloin, rendered into the meat to ensure the flesh remains juicy and succulent. The crust at the edges of the roast delivers a contrasting texture to the flesh and infused the meat with additional flavour. I asked for additional servings of the beef and it definitely goes well with warm potato salad.

Seabass Fillet with Tomato and Olive salsa. The boneless seabass is moist, meaty yet flaky. The fish is lightly seasoned and it just melts in your mouth. The tomato and olive salsa provided a sweet and tangy burst of flavour but did not overpowering the flavour of the fish. Yummy!.

Now coming back to Level 3, the desserts. From the folks that curated Sunday brunch menu fully based on pancakes, you know the pancakes are a must-try Moist, flavourful with a hint of chewiness, it is just delicious. Together with chantilly cream, brown butter and maple syrup are just impeccable.

The Macaroons has a light, smooth and crisp exterior. Followed by a chewy filling that is not overpoweringly sweet. Also don’t miss out on the solid chocolate Santa.

Overall, it was an enjoyable Christmas Brunch meal. The Carving Stations and dessert level of the brunch tower are my favourites. If you are still looking for a Christmas Brunch place this season, do consider Xperience at SO/ Singapore. Cheers!!

Ten Sushi – 6th Anniversary [MEDIA INVITE]

Ten Sushi by Marusaya is celebrating its 6th anniversary in November 2021. A casual Japanese dining concept by Marusaya group, Ten Sushi offers an extensive menu for a small restaurant, however, their signature sushi, sashimi and hand roll to are a must-try. Here are the highlights from their menu.

Assorted Sashimi "Ten Special" ($58). This beautifully plated sashimi consists of salmon, tuna, yellowtail, mackerel, prawn, octopus, squid, scallops, uni and oysters. All the ingredients are fresh and cuts of the sashimi are thick and generous.



Omakase Sushi
Omakase Sushi (12-piece sushi, roll sushi, $49). Signature sushi combination at Ten Sushi. Provided a good spread of 12 different types of premium sushi, seafood including uni, unagi, tuna belly, salmon belly, scallops and more; plus, roll sushi. Each of the sushi is delicious on its own, providing a good insight into the top-notch quality ingredients used by Ten Sushi. Presented in a slim long plank, it just gave added a WOW factor to the sushi.

"RAINBOW" 6 kinds of Seafood Rolls ($28). Each avocado roll is topped with six different types of sashimi and generously drizzle with tobiko and ikura. Each of the rolls delivers a distinct taste and if you are looking for a different flavour, try to squeeze a drop of lemon juice for that little spark.

Sakoshi Oysters from Hyogo Prefecture ($34 for 6 pieces, $60 for 12 pieces). The oysters served at Ten Sushi are always outstanding. It is fresh, creamy and subtly sweet. Drizzle in Japanese soy sauce and topped alternately with ikura and tobiko, it just enhances the flavour of the oysters with its contrasting flavour and texture.

No MSG Special Ramen, the broth is made from fish (Marusaya signature dashi stock) and pork bones. The complete set Ramen and Pork Char Siu & Egg is $19.80. The milky broth is creamy and robust, while the ramen is bouncy with a good chewy bite to it. The egg is cooked to perfection, while the char siew is tender and succulent. All the ingredients combined to create a good bowl of ramen.

If you don’t like a certain ingredient in ramen, you can also order the following: Ramen ($12.80), Ramen and Egg ($14.80) and Ramen and Pork Char Siu ($17.80). Actually, I don’t mind having just a bowl of Ramen “naked” or without toppings.

Of course, dining at a Japanese restaurant will not be complete without a bit of alcohol. Give their “I Love Sushi” Sake ($110) a try.

Overall, it was a great meal and a nice experience returning to Ten Sushi. The food is always good and their new ramen is just comforting. This is the first time we dine at Ten Sushi in the afternoon, the natural lights just brighten up the place nicely plus it is nice to take photos. Kanpai!! Cheers!!

The place for Authentic Indonesian Martabak in Singapore

Indonesian Martabak is a well known street food that comes in two kinds which are the Martabak telur and the Martabak manis. The martabak manis which is also called (Terang Bulan) is initially a thick sweet pancake that is usually covered with various toppings ranging from chocolate, peanuts,cheese, condensed milk, margarine and sesame seed.

The dish which is referred as murtabak is a multi-layered pancake originated in the state of Kerala where it was known among the people as "mamaks' ' ("mama `` means''uncle `` in Tamil). Meanwhile, "mutabar"is referred to as the main name for a particular dish in other languages and dialects as "murtabak”.

Today martabak are made in a way that consist of several international flavours such as skippy peanut butter spread, toblerone, ovomaltine, durian spread and lotus biscoff. In addition, Manis comes in a thin and crispy variety that is regarded as Martabak.


Ingredients that is use for the preparation of martabak are:
250 g all purpose flour
½ tsp bicarbonate soda
2 hand full ground peanut
150 g cheddar cheese
75 g sugar
350 ml water
1 egg
¼ tsp salt
4 tbsp unsalted butter
condense milk
1 tsp water
3 hand full chocolate chunk

This is one of the best shops that are capable of offering you good perishable food. This shop uses home-grown ingredients made from Indonesia to make the most authentic martabak in Singapore. They are mostly occupied by Muslim chefs who are always careful while making martabak in the private kitchen. I can recommend this shop to be the best because they are capable of delivering the martabak to you anywhere in Singapore.

2. Jtown
This place deserves a good mention because of it's grit ,they have stood tall even when other retailers are closing down ,it is well known for serving simple, honest, and most importantly, affordable food. They sell other dishes such as Bakmi Ayam Cabe Ijo and Mie Goreng but one of the most attractive is the Smile Martabak manis which is often sold out at dinner time.

3. My Home Cafe
My home cafe sets itself differently by offering the most affordable martabak manis you can find in the part of the town its located, you can get Smile Martabak Budi Plain at S$3 and small at S$5 with additional toppings including Chocolate of about S$0.50, Cheese of S$1, Peanut of S$0.50, or have the best of all worlds with the Mix of S$2. In addition, they offer other Indonesian fares.

4. Pancake Boss
Pancake Boss is also known as a moniker well-earned and it is an OG Singapore store meant for all things in Martabak Manis. Meanwhile, they take that badge of honour very seriously, and this is seen by waiting for at least 30 minutes. Culinary Martabak Manis creativity is at an all-time high with options like the Toblerone of about S$9.50 or the Boss combo of S$10 that comes with chocolate rice, crushed peanuts, and cheese. Other worthy mentions include the Red Robin of about S$14.80 with its red velvet base, cream cheese, oreo, and the Pink Panther of S$14.30, starting with a strawberry base and filled with white chocolate, strawberry, and cheese. Like it's menu, the possibilities here are extensive—even the most discerning Martabak Manis connoisseur would find something they like.

5. Markozar
Markozars nickname is derived from the portmanteau of Martabakand Oza, which implies throne in Japanese. One of their biggest dream is being the queen of desert and it reflected on their sample box Martabak Manis Minis (S$5.80) which comes with smaller portions of their Good Ol Peanut, Choco rush, Nutella Falls, and Original

6. Terang buran
Teran buran is known as the brainchild of Dita who hails from surabaya, indonesia By that virtue you can be assured that they make a very good martabak manis which they range from Party Box (S$9 for four standard flavours; S$12 for four premium flavours; S$10 for two standard and two premium flavours) that promises a quartet of flavours in one round to enable you get the best of all worlds. Furthermore, the standard flavours come with chocolate rice, peanut corn, chocolate banana, and cheese oreo, while the premium flavours include Nutella cheese banana, chocolate cheese, and milo.

7. Walaku
This is a very good place to get a good martabak, they also sell other dish such as ukus/Bakar Platter Set (S$45)—a behemoth of a dish that comes with Nasi Lemak, spiced chicken, Signature Chicken Wing, smoked duck, Otah, grilled salmon, sambal egg, sambal kangkong, and Ikan Bilis, as well as nuts. They have a good remark regarding their martabak manis though not as competitive with other colleagues but very good flavour.

8. Victory restaurant
This restaurant is one of the most famous for their signature martabak, which they have produced and sold millions of martabak over the years.

9. Burgis Cube
Burgis cube is one the small cafes where you can get an authentic martabak.

10. Gading street food
This is one of the most favourite Indonesian eateries that also serves martabak, a kid-friendly Indonesian restaurant that also offers take out.

Martabak is a very sweet Indonesian street food with great history and it is rich in several vitamins that enrich the body.
